    New kegging question

    You should upgrade to the dual body regulator, keep the manifold, and buy another gas line with a disconnect. That way you could pour two kegs off the manifold and be force carbing the third keg you will eventually buy on the second body of the regulator.

    Ale and lager yeast: can I use both yeasts?

    They say that WLP060 is a blend of three yeasts and one is a lager yeast, however it probably is the San Francisco Lager yeast which ferments at ale temps and I don't know if it is a true lager yeast.

    Try not racking to secondary and add the hops to the primary now. I don't secondary anymore and I dry hop in the primary all the time.

    Hope bog/hop sack - when to remove?

    I think it would depend on style but, I usually remove after I am below 100F when chilling. That is just what I do on my system and method though. So maybe repeat the same recipe removing bag at flameout and removing at a different time during chilling.

    American Brown Ales can be drier with very pronounced hop flavor. So there already is a category, American Brown.

    If you want your beer to finish "dry" can't you sub up to 20% simple sugar for maltose.

    My First Saison

    I have a saison in my bucket fermenter right now. Used 3711 and tasted my hydrometer reading yesterday. Has plenty of spicy esters fermenting at room temp. I used the recipe from Brewing Classic Styles. Can't wait to drink.

    Substitute Pacman for Safale US-05 Ale Yeast?

    Dead Guy ale is a maibock fermented with pacman at 60 F. I love using pacman, i just did a 12% barleywine with it.

    The moonshot lady brought the movie down. Horrible idea for a beer. Why did she leave Sam Adams? There has to be more to that sotry, you just don't leave a company like that after 15 years to sell a gimmicky product.
