Best yeast for dark fruit flavors in high gravity Belgium style beer ?

I want to brew a high gravity (1.100+) Belgium style beer. I am looking for a dry yeast that will accentuate dark fruit flavors - raisin, plum, maybe a bit of pear or apple. Not looking for spice or bananas. Suggestions ? Safale BE 256 ? Mangrove Jack M31 ? Or M47 ? Lalbrew Abbaye Belgium...

BE-256 dry Fermetis 'abbey'; has anyone used it , results?

"I saved one bottle for nearly two years and that was amazing. Not boozy at all and heavy dark fruit and caramel." <--- This is what I am looking for. You can't expect a high gravity Belgium to reach peak flavor in a few months. "I'm getting a lot of dark fruit and typical belgian dark strong...

BE-256 dry Fermetis 'abbey'; has anyone used it , results?

Are you mixing up Belgium Abbey Ale yeasts (designed for high gravity) with Belgium Saison yeasts ? Saisons have the spicy character. High gravity Abbey Ales are supposed to have the stone fruit character. Maybe I'm missing something but I don't see why one would want to use an Abbey Ale...

Reiterated Mash - Unequal Grain Split

Interesting questions. I'm about to do an iterative mash as well. I look forward to the comments you receiver. @doug293cz ?

Meet Thing 1. A 5Kw Induction All In One...

You know your brewing system works well when you run out of kegs. I have another 7 in my basement, 5 in the beer fridge. COVID has cut down on the number of visitors I have these days. BTW... there was supposed to be a Thing2. It was going to be a larger 10-12 gallon version of Thing1. I'm...

Meet Thing 1. A 5Kw Induction All In One...

I've brewed 10 5-6 gallon batches with it now. Thing1 works great. I look forward to brew days and look for excuses to brew. All the beers have been exceptionally good, in my experience. Ed Wort's Pale Ale. I forget which beer this is. So many beers...

Meet Thing 1. A 5Kw Induction All In One...

Another mashing pic. I love that Thing1 is on wheels. If I'm brewing on consecutive weekends, I put all the accessories in the grain bucket and roll it out of the kitchen until it is needed the next weekend. Way faster than hauling stuff in and out of storage. I also like that I can roll it...

Meet Thing 1. A 5Kw Induction All In One...

Some pics of Thing1. The boil kettle is an 11 gallon Bayou Classic, which is induction friendly. (#1044 IIRC.) 11 gallons is a perfect size for making 5-6 gallon batches. The grain bucket is 8 gallons. It came with handles, which I cut off and a thermometer and port, which I plugged. It has...

BremMonk, Grainfather or similar DIY project

See my Thing1. It's like a Grainfather on steroids. Works great.

    American Porter Chinooklehead Porter

@rhys333 How did the Kveik batch turn out ? What temp did you ferment at ? What flavors did the yeast add ?

Meet Thing 1. A 5Kw Induction All In One...

Update. I've brewed 10 beers with Thing1 now. I have several friends who are very skeptical of home brewed beer that say my beers are excellent. Especially the Chinooklehead Porter. American Porter - Chinooklehead Porter All the beers have a very clean finish. Just as clean as commercial...

    American Porter Chinooklehead Porter

I just kegged a second batch of this beer. It almost perfectly matches the first one I brewed and it's excellent. I have several friends who "don't like" dark beers but love this one. Don't be in a hurry to drink it. Seems the longer it ages the more nutty, coffee, plum flavors it develops...

Meet Thing 1. A 5Kw Induction All In One...

I have not seen that particular user manual for this PID. Good find ! I believe I changed this parameter and the only thing it changed was how often the PID sampled, not the minimum on time. But the name "ot" suggests otherwise. I'll test it the next time I brew again and post back what I find.

Meet Thing 1. A 5Kw Induction All In One...

I have not figured it out. The minimum "On" time from the PID is too short. It works OK, but would be nicer if the minimum On time was longer. I could build a logic circuit to keep the induction coil on for at least ~10 seconds whenever it is turned on, but it isn't worth it. Otherwise...

Meet Thing 1. A 5Kw Induction All In One...

Update I started measuring the control temperature in the wort returned back to the grain bed. I did this by putting the temperature probe right in the wort flow. I also removed the center overflow tube and used a perforated (drilled) plastic plate (diffuser plate) to more evenly distribute...
