    Dammit!!

I kegged a dunkel last night, and I hit it with 30 PSI to force carb it. The poppet wasn't in the proper position, and I got a face full of beer. If it had been anyone else, I would have been laughing my face off. I used a paper towel to wipe off what didn't end up in my mouth:mug:

    Two stuck fermentations

The airlocks on these guys are still going, and I took gravity readings to check out how much the enzyme has done. The Dunkel that was at 1.026 is now at 1.016, and the Pale Ale dropped from 1.032 to 1.026. With the airlock activity over the past few days, I was expecting a little more of a...

    Two stuck fermentations

So the purpose of the enzyme it to break down the complex sugars that the yeast could not convert in the first place into simple sugars it can convert? If this is the case, wouldn't it be a better idea to add the enzyme to the primary when the majority of the yeast is still around? Most of...

    Two stuck fermentations

I should have mentioned that the airlock was bubbling before I swirled the enzyme into the wort (or is it considered beer yet?). I checked it again this morning and the airlock was still bubbling about every 15-30 seconds. Does this enzyme usually take a few days or a week or two to work out...

    Two stuck fermentations

I threw a teaspoon of AE into each batch, and gave each a good swirl. This stuff seemed to act pretty fast, literally within seconds my airlock was bubbling, but that subsided pretty quick.

    Two stuck fermentations

I do believe that one of the mashes was under target temp, possibly even in the 140s. I remember that being an 'Oh S***!' moment. I thought that this might produce unexpected flavor(s), but could it have caused the yeast to underattenuate?

    Two stuck fermentations

I am using a glass hydrometer, and i verified that it is reading water as 1.000. The beers definitely do taste under attenuated. I have heard about people using Beano or amalyze enzymes to save stuck fermentations, would this work for me with both beers being in secondary (remember, one...

    Two stuck fermentations

I transferred to second out of habit. Out of the couple dozen batches I have done, I have never had a problem hitting FG in 7-9 days, and I left these in for 14. Granted, I didn't measure the FG BEFORE I transferred to the secondary each time (must have had too many homebrews:drunk:) Now that...

    Two stuck fermentations

I have two beers in primary at the moment who seem to have stopped fermentation. Here are the brew details: Death by Dunkel - Was in primary for two weeks, and has been in secondary for just over a week. I did a 1L starter without a stirplate, after 2 weeks it was stuck at 1.026. I repitched...

Irish Red Ale Rolf's Irish Red

I have this in a keg right now, and it starts out very nice but ends really HOT. Not sure if this was caused by something in my process or something with the recipe. My wife loves it though, and she voted for this beer specifically to be a 'year round' brew.

British Brown Ale Nut Brown AG

I just finished a keg of this. I rushed it at the start, because I wanted to have it ready for my Dad's 60th bday part. I had it kegged and ready to drink at 13 days, and it wasn't anything spectacular, but I was kinda expecting that anyway. After the party there was about a 1/3 of the keg...

    Lid not sealing on Keg

Last night I went to keg my fourth beer - the first three were pretty painless, I sanitized the keg and beverage lines and then transfered the beer, and purged O2 and pressurized for a few days @ 30psi. This time, I was not even able to get through the sanitizing. After I put the solution in...

Best way to attach drip tray

Thanks for all the input. I like the idea of using magnets the most, as they seem pretty strong and can be moved around as needed with no modification to the freezer. I've been to http://www.rare-earth-magnets.com/, but I am not sure exactly which magnet would work best and be strong enough to...

Best way to attach drip tray

I am still putting the finishing touches on my keezer, and I recently received the 19" drip tray from barproducts.com. I tried to attach it using a couple of metal L brackets, and some industrial strength velcro pads. This works alright, but the drip tray sags away from the keezer because of the...

    Beer Porno

How can that beer be brewed in Nov and then botted in Jan of the same year. Has that brewery found a way to generate 1.21 gigawatts of power?

    C02 tank groaning

Well I tried another valve, and there is still a leak on the manifold I purchased. I wrapped the check valve about 1.5 times around, should that be enough to ensure a tight seal, or do I need to wrap it more?

    C02 tank groaning

So I grabbed some teflon tape last night, and put it on all my connection to my 6 way manifold. It fixed most of the connections, except for one checkvalve. I even moved that valve to another port on the manifold, reapplied teflon tape to it about 5 times, but it still has a minor leak. I will...

    C02 tank groaning

I found a few leaks last night, all of them were on the manifold with the screw connections. I tried making the connections as tight as I could without breaking anything, but all that did was dimish the leaks instead of getting rid of them. I am going to pick up some teflon tape at the hardware...

    C02 tank groaning

I forgot to mention the groaning was continuous. When i came back to shut off the C02, the tank was still groaning at the same volume it had been when I first turned it on. This was a brand new regulator I received from the LHBS. I was using another one from them, but they gave me a single...
