I think the insulation is a must. I built mine as the iRIMS as BrunDog already mentioned, and it helps a great deal to keep the heat in the tube. With the probe on the outlet of the HEX I have not had any trouble with overshooting temps.

I have a couple Vitals Vaults for base malts, and then use cereal containers for specialty malts. That allows for easy storage of 6-10 specialty malts without taking up large amounts of space. Occasionally Petsmart has deals for the Vitals Vaults, I think I was able to get them for ~$20 apiece.

you're adjusting the flow rates with valves on the output side of both pumps (I hope) - so you will be ok with different pumps. you'd have to do this even if both pumps are the same.
