All my IPAs taste the same

Great thread - thanks for letting us participate in the problem solving. I really like the idea of more late hops, and I would consider brewing a 3.5 gal batch just to see if cooling faster is also a good idea. If you want to take it another step, try doing a long primary to minimize your...

    Top-off Water?

Lots of folks only boil about 3 gallons out of every 5 gallon batch, adding 2 gallons of tap water after the wort has been cooled and added to the fermenter.

    Post your infection

Buhay - looks fine to me. If you used Star San, you can sometimes get some white-ish spots or covering. Happy brewing!

Will off-flavors improve or get worse with time?

The one issue I ran into when I started brewing all-grain was tannins. It turned out I had an improperly calibrated thermometer. The heavy tannins from a high mash temp and high mash PH (also hadn't yet really read How To Brew that closely) created a very astringent beer. Does your flavor...

IIPA w/ 12 oz of Centennial hops - what OG should I aim for?

Bob's recipe looks pretty tasty. Was there an off flavor present?

    Wyeast 1968 substitute? (1318?)

Both can make fantastic beers, IMHO. I particularly like 1968 for session beers (<1.050 or so OG) because you can start at 1.040-ish and still have a lot of body left in the beer after fermentation is complete. Recently made a 3.5% abv session AIPA with 1968 that went fast. Have also used it...

Dry hopping: flavor evolution over time?

Awesome, thanks partners. Will be sure to let you know how it turned out. Best to both.

NB Caribou Slobber - Cold Crashed Too Soon

I would probably taste it this evening, first. If it tastes great already (which it totally might - pretty bulletproof recipe), keg it and start carbing at 12 psi. Serve in 2 weeks and enjoy. If after tasting, it could benefit from more conditioning or if it tastes quite sweet, just warm up...

Dry hopping: flavor evolution over time?

Question for this awesome community: brewed a relatively simple, all-grain APA based on my house IPA with lower gravity, lower hop load, etc. Decided to make it a bit more exciting with some dry hopping. It's been on the hops (~72F, 1 oz each of simcoe, citra, and cascade) for about 4 days...

    WTF Happened To BTV?

So grateful for Chop & Brew, Chip. Thanks for your creativity and efforts. Was great to see Dawson again - his unabashed beer nerditude is infectious.

Hoppiest commercial brew you have ever drank?

For a "single" IPA, Port Brewing's Wipeout did a really good job of frying my taste buds.
