    If it fermented or is fermenting, the yeast isn't dead. What temperature did you leave the carboys at? Too high a temp and fermentation may be over quickly.     Should I be worried?

    Nothing to worry about. The yeast that's left in the beer are consuming the priming sugar, causing a mini fermentation. In a few days time, you'll have carbonated beer. Put them in the fridge next weekend for at least a day and crack on open. They may or may not need more time, though.

    What was your fermentation temp? As RM-MN said, temperature will affect your fermentation - too cold, and it'll slow, too warm and she'll rip right through.

    Things I've learned about brewing

    The reason you seem to be "pulling more sugars" with a longer boil is that you're creating a more concentrated wort. More time on the flame = more liquid being boiled off = higher OG. There's nor problem with this, but if you're trying to hit a specific OG range or copy a specific beer style...

    No chill

    I let my beers cool in the brew kettle for a few hours with the lid on before transferring to my plastic fermenters. Usually leaving it to cool further over night works fine. Have never had a problem with the no-chill yet. And, as others have said, never pour boiling wort into a glass fermenter...

    Is this infection?

    The first pic just looks like hops debris floating around. Probably got disturbed when you racked the beer onto the oak. Nothing I'd be concerned about. Some of that fermenter head-space might give you some problems if primary fermentation is over, though.

    Transporting wort outside

    I'll second Sadu here. Carrying 5+ gallons of wort for 5 minutes is going to a treck. I'd find a way to ferment at home, but you could always invest in a small trolley to roll the fermenter down the road if you really wanted to, though.

    I'm with you here. I brew all my lagers and pilsners over winter to make use of the cooler temps and stow them away until early summer.

    What I did for beer today

    Work has been kicking my a** the last few weeks, so I haven't done much of anything beer-wise until this weekend: Bottled 10L of Rasberry Berliner Weiße, organized & rotated my current beer stock, and took count of my supplies. Best of all, I drank some homebrew!

    Cold enough for lagering?

    I usually use 4 1.5L ice bottles at a time. I have 8 bottles all-up, 4 in the bag and 4 in the freezer. In summer, I rotate them every 24 hours and in winter every day and a half. I have a few extra smaller bottles that I add in as needed.

    I say go for it. If you can only get it to 40°F, just lager it for longer. I can only get my coolbag down to 8°C, which is like 47°F or something. My lagers come out fine.
