    San Fran/Sonoma Musts?

North Coast is a bit of of a drive but it's still in the area. Anderson Valley likewise. Heretic out toward Oakland and it's neighbor E.J. Phair would make for a nice trip to the east bay, and you could swing through Triple Rock down in Berkeley in the same trip. Marin Brewing Company would be...

    Beginner Question on Proofing/Pitching Yeast

You should be reasonably okay. You may have stressed the yeast a bit by pitching right into a food-filled and slightly acidic environment (wort) instead of letting them re-hydrate in a neutral solution (water), but you should still have enough viable yeast to get decent fermentation. You may get...

    washing and storing yeast

sure, but as long as you don't add sugar to the wash (which you shouldn't, just sterile tap water will work), you shouldn't need to burp. just keep it refrigerated.

    Late addition of bittering hops?

Absolutely I made what was supposed to be a Blind Pig clone, but ended up fermenting in the low 50's due to a cold snap, and we didn't account for the ibu loss due to hop bags... so we ended up with something closer to a Cal Common. Boiled up an ounce or so of EKG in a few quarts of water for...

Leinenkugel sunset wheat clone extract kit

Dont know the kit, but do know the beer, and dig it as a light cheap drink, but would assume that the coriander and spices would only add so much, and are typically added post primary fermentation so that the aromatics aren't blown off. You don't necessarily need to rack to a secondary...

I've produced over 100 Gallons of Beer

100 gal total or just this year. If it's this year alone... I wouldn't brag, or ttb could be on your ass.

Oh Dang! What will i get?

dhruv... I love it. Keep it cool and you've got a dunkel though, yeah?

    First batch problems.

You say you made a starter? That's like a 1 gal batch of mead, how much starter did you add? Maybe it was just a bit much. I made a similar 1gal batch of blackberry mead with 1 vial of wine yeast and had a lot of residual yeast trub, which cut down on the actual available mead... maybe you just...

Secondary fermentation & the role of yeast

You're right on a lot of points, but just to clarify, Bud mostly uses the beechwood to increase surface area so they can speed up the fermentation process so they can keep pumping out brew, not necessarily for flavor (not that you suggested that, just gets a lot of folks confused). I'd say...

    Brewers Best Milk Stout

Have you looked into the local water profile? That could shift the balance a little more on the bitter side.

Bottling first batch Sunday, got a sanitizing question though

I've had mixed results sanitizing caps. I don't normally, but thought I'd try it one time, just rinsed them through a StarSan solution for a few minutes then bottled, about a week later, those caps had little rust spots starting to form. Not sure if this was just a really bad batch of caps or what.

Wtf is cold-brewed irt Guinness Black Lager

So... What does Guinness mean by cold-brewed in reference to their new Black Lager? If its just that it's fermented cool, (like a lager), then that's false advertising, as the traditional definition of "cold-brewed," (with regard to coffee or tea), is a brew that's allowed to steep in cold...

Effects of Hop Substitution in SN Stout

It may not be a clone, but should still be a good brew. Nugget is used in SN Porter, and I've always thought it would be great in heavier brews, and would play nicely in a barleywine or heavy stout.

Wondering if this is a good deal

Agree with what was said above, you can get refurbished kegs for $50/each, buckets for $6/each, and most of the other stuff dirt cheap at MoreBeer, and piece it out exactly as you want without grabbing a bunch of stuff you'll never need. And yeah, an 8qt brew pot seems near useless unless youre...

    Bottle Bucket

The only issue would be that some trub/yeast will settle out in those few days. This would be a good thing except that on bottling day, you have to add some sort of sugar for carbonation, which has to be mixed into the rest of the solution evenly to ensure equal carbonation of the bottles...

Does anyone make English Ales anymore?

Plenty of recipes out there, made in the traditional fashion. Check out Brewing Classic Styles by JZ and John Palmer for some straight up, stylistically accurate recipes, though there are plenty more out there.

    Original recipe? Any thoughts?

Honestly, I don't quite know what to make of it, but I don't see anything glaringly wrong. It seems like it could make for a very interesting beer and I'd be eager to try it. I have no idea where the hops are going, have never used any of those, but I... well shucks bud, it sounds really...

    Grains appropriate in a Kolsch?

You're a homebrewer dude, try it and if it doesn't work, serve it to your Bud drinking friends. For a more scientific answer: looking at Designing Great Beers, grain incidence and proportion values for NHC 2nd Round Recipes are as follows (the values below indicate how often and in what...

    Anyone make starter in carboy?

You can, but typically you don't want the starter wort in your actual batch because the flavors that develop as a result of vigorous yeast growth typically aren't quite desirable in an actual batch of beer. You can make your starter in your carboy, but you will want to decant off the starter...
