    I'm just about to package one I brewed a few weeks ago. The base is Pilsner and Munich, plus 3.2% each C40 and Chocolate, and 1.6% each Roasted Barley and Carafa II - SRM around 25. Are you able to share your Köstritzer clone recipe?

    I just did an Idaho 7 + Chinook combo that I really like. Use anything for the bittering addition, then a 2:1 ratio of Idaho7 to Chinook for aroma, whirlpool and dry hop additions.

    I had something similar looking to that before. I'm not sure what it was, but I don't think you should bottle it just yet. Whatever it is could be still fermenting. Don't ask me how I know. :)

    For my 2 gallon batches I've been using 1/4 tsp of gelatin dissolved in 1/4 cup of water.

    I have had good results with Knox unflavored gelatin. I cold crash in the fermenter for one day, then add the gelatin solution and let it sit for another day or two before bottling or kegging.

    First BIAB Plan

    Looks good. I used to pull the bag from the main mash and then dunk sparge in a separate pot with 170F water for 5 to 10 minutes. Now I just do a full volume BIAB mash because it's a bit easier. My efficiency is 5% to 8% less this way, but that's ok.

    'New' Lallemand Yeasts - New England and Kolsch

    Mine started at 1.049 and went down to 1.008, so around 80%. It's been sitting in a keg for a week, but hasn't completely cleared yet. I didn't add any gelatin (yet).

    This Hefeweizen was fermented with Danstar Munich Classic. It has nice banana flavor.

    I brew similar size batches and have used S-04 many times. Half of an 11g packet of S-04 will be plenty for this 8 litre batch.

    Are you able to get any Lallemand Philly Sour yeast where you are? I'm going to try it on a Gose this weekend.

    I've also got a Kolsch fermenting at 16C. Mine took a couple days to get started, but seems to be going steady now.

    First brew of lager.

    How many volumes of CO2 were you targeting? 15g in 5l will only get you to about 1.6 volumes, which is low for a lager.
