    grassy 2013 Amarillo hops

I recently made a single hop pale ale with Amarillo from Hops Direct, and I have to agree there was definitely a grassy aroma and taste, but after a week or so I am noticing the grassyness less and some orange flavors are coming thru. Overall, I'm still a bit disappointed with this years batch.

Mexican Hot Chocolate Stout- How much spice?

I just recently bottled a chocolate chipotle stout and my recipe was similar to yours minus the lactose. I soaked 3 oz of cacao nibs , 2 vanilla beans and 7 small chipotles (about 2 oz dried) in vodka for a week. I added that to the primary after fermentation was completed. I tasted it after...

Mini fridge for 5 gallon carboy

It does have a freezer, but it wasn't an issue, I just removed the shelf directly underneath the freezer. It was a tight squeeze with a regular stopper and an s shaped airlock, but I just use a blowoff tube into a quart of starsan. I'm going to see if I can fit a 6 gallon carboy I as soon as I...

Mini fridge for 5 gallon carboy

I use a ge 4.3 cubic ft mini fridge for my 5 gallon carboy. I had to cut the plastic moulding off the door, but it fits perfectly with no other modifications.

    Wyeast 2112 Super Slow

I just made a cal common a few weeks ago and it's still in the fermenter. I left it at 60F for 4 days, then bumped it up to 68F for 3 days. I checked the gravity after that and it had dropped from 1.055 to 1.017. It's now sitting at 50F for another week or two. I would say just let it sit in...

    Garlic experience anyone?

You could possibly try to find some black garlic. That would make for an interesting experiment. It has much sweeter notes that even roasted garlic and I've seen some tutorials on how to make it at home with a rice cooker. But if time/money is a factor I think a little bit of roasted garlic...

    Test: Temp while fermenting

Very interesting experiment. Let us know how it works out. Also I was wondering what make/model mini fridge you have and whether or not you had to make any modifications to it. Thanks.

    belgians with American hops

I made a Belgian ipa a few months ago with some Amarillo and it came out really nice, still have a few bottles left. I used wyeast 3522 Ardennes. There is a nice blend between the yeast and the hops.

    Blonde Thai Ale

Sorry, I didn't see your post. I'm not sure how your abv came out so low. Mine was nearly 7% so maybe your hydrometer is broken or there was a problem with your mash. I agree with the ginger being overpowering at bottling, but after tasting it fully carbed I'd say increasing the lemongrass and...

    Brotherly Love APA Recipe

Huh thanks for the info. I figured that red wheat would add more color. Do you think I should use a darker crystal malt or does in not really matter that much?

    Brotherly Love APA Recipe

Hah I have a feeling most people wouldn't want to drink a beer called child lover, but I agree with you on the bittering hop. Maybe I'll go with .5 oz of warrior and move the rest of the additions later. Also I was planning on mashing low, around 148 or so, but was wondering what the...

    Brotherly Love APA Recipe

I've been toying around with an APA recipe using Simcoe and Mosaic. I haven't brewed with either of these, but I figure it'll make for a nice combination. I think I'm on the higher end of IBUs for a pale ale, but I like a hoppy beer. Here's my recipe so far: Brotherly Love APA OG: 1.059...

    Lemon ginger witbier

I just bottled a beer that's pretty similar to your idea. I made a blonde ale with a bunch of thai flavorings. I used lemongrass, ***** lime leaf, lime zest, coriander and ginger. It's only been in the bottles for a few days, so I can't tell you how it'll be carbed up, but the gravity samples...

    Blonde Thai Ale

My OG ended up being a few points higher than I expected. It came out at 1.068 and right now it's been at 1.017 for the last few days so ill probably bottle later on this week. My gravity samples tasted great. There was a good balance of all the flavors and the honey malt gave it a nice...

    Blonde Thai Ale

It was fermenting like crazy for the past couple days and it smelled wonderful. It's beginning to clear up a little bit so ill probably take a gravity reading in a few days. The wort sample was really tasty but its hard to tell if anything was overpowered because it was so sweet.

    Blonde Thai Ale

Well I just finished brewing this and it smelled/tasted amazing. I ended up adding an ounce of Amarillo @ 10 minutes just to use them up. I'll keep updating this thread as it ferments and let you guys know how it turned out.

    Blonde Thai Ale

Huh I've never heard of that brewery before. But that's pretty much the same idea I was going for. I was originally planning a Wit, but figured a clean American Ale yeast would work out a little better.

    Blonde Thai Ale

Wow a full pound of ginger seems a bit intense to me. I don't wanna cover up the other flavors.

    Blonde Thai Ale

Hmm I've never used Sorachi Ace, but I read it has a lemongrass/lemon flavor so i thought it would match well. I also have an oz of Amarillo in the freezer that I've been looking to use up. As far as the amount of ginger goes I've read a lot of mixed reviews. Some people say an ounce is way...

    Blonde Thai Ale

So I've been trying to come up with a nice refreshing ale for the summer time and I'm going to experiment with this recipe on Friday. I work in a kitchen with a bunch of Thai people and I really enjoy a lot of the herbs and spices they use in their food. I already bought my extract, malt and...
