    first pilsner - decoction questions.

I did my first decoction brew last Dec and I am never doing anything else again. Don't be scared, it's really not that much harder and the beer it makes is phenomenal. I made an oktoberfest in Jan and the complexity of malts and caramel flavors is noticeably better than my previous version even...

    Carbing a keg

I do this all the time, it helps carb up a keg quicker and makes your CO2 last longer. Google search for a spreadsheet that shows how much sugar to add to equal how many volumes of CO2 you want in the beer for bottle carbing and just add it all at once in the keg. Works great, but it will make a...

Kolsch Recipe Using Citra + Galaxy looking for feedback

I'd change up the hop schedule a little. An oz of Citra at 60min is going to be very bitter for a light beer like that, try cutting it down to 0.5oz. I've also become a fan of hop bursting, with hop additions every 5 minutes starting at the last 20 of the boil. Keeping the 2oz you have, I'd...

    Honey blonde ideas?

Put it back into a fermenter and add 4lbs of your favorite berry. Bam, berry blonde :mug: ETA: I just noticed it's still in the carboy, perfect.

Anyone Here Know of any Tricks to Tone Down Bittering Hops?

Maybe I should have been a little more specific. I have a beer that is on day 10 in the primary that had too many bittering hops. What can I do at this point to reduce some of the bitterness?

Anyone Here Know of any Tricks to Tone Down Bittering Hops?

So, I had been making some pretty big IPA's bordering on Imperial and decided to take a step back and tone them down to something a little more sessionable. But, without thinking, I threw in almost my normal amount of bittering hops for the 60 min addition and it has come out wayyyyyyy too...

Irish Red Ale Sean's House Red

I like this version, and this yeast, a lot. It finaled out about 1.016, so quite a bit higher than other reds which I compensated for with a little more hops. Using notty it got down to 1.008. I think it is kind of an english bitter / irish red hybrid. I will definitely be making this again...

Irish Red Ale Sean's House Red

This recipe has become a regular at my place. I have made it several times varying the fermentables and settled on the below. 6 lbs NB Gold Syrup 1 lb Carared 12 oz Caramel 60 4 oz Roasted Barley 300 SRM 1 oz Williamette @ 60 min 1 oz Williamette @ 30 min 1 oz Williamette @ 5 min Grains...

    Fruit Beer Strawberry Shortcake

I've made this a couple times with some slight differences. The second batch I liked a lot more. In it I dropped the lactose as I really only had it in the first one as a novelty. Second , I used a liquid kolsch yeast instead of notty and that was much better IMO. This is a 5 gal batch. As...

    Nottingham Off Flavors?

So I did a side by side of the two beers that I made with this yeast and they have the same terrible smell and taste. They literally have no similarities other than the yeast; one being a strawberry blonde with a pilsner base williamette hops and the other being an irish red with 2row base and...

    Nottingham Off Flavors?

It was pretty low on both, 1.009 and 1.012.

    Nottingham Off Flavors?

Maybe. It's a sharp taste that make that twinge in the back corners of your your mouth. It's not drinkable and very disappointing. I tried it at that temp and it wouldn't ferment with either beer. I raised it a degree a day until I saw airlock activity at 64. I tried to lower it again and it...

    Nottingham Off Flavors?

Have any of you guys run into some weird flavors with Notty? It's hard to describe but it is this strange, almost sweet flavor that gives you this tinge in the back of your cheeks. It's almost like a wild yeast taste. It has happened in two different beers with no similarities other than...

    Fruit Beer Strawberry Shortcake

Here is a brew I came up with as somewhat of an easy drinking/ desert beer. 6lbs Northern Brewer Gold Malt Syrup 1lb Wheat DME 8oz Carafoam 1oz Lactose 4lbs Chopped Strawberries Nottingham Yeast 1oz Williamette @ 60 min 1oz Williamette @ 20 min 1oz Williamette @ 5 min Brewed @ fermentor temp...

    Rye lawnmower ale

Hey there , I am checking out your recipe as I am brewing a Rye IPA right now. I don't have much input on the grain bill as I mostly do extract but my rye beers are about 20% rye as well. As for the hops, I am using cascade because it's my go to IPA hop mixed with saaz to accentuate the rye...

newb yeast question for a SMaSH

US05 is one of my go to yeasts if I'm not trying to replicate a geographic style. I used it in a citra IPA just last weekend, so yes it will work just fine. Sent from my iPhone using Home Brew

Does Weyermann Pale Wheat Require Mashing?

I'm looking at making an extract blonde and wondering if the above or any other wheat malts are out there that don't require mashing and can just be steeped. Sent from my iPhone using Home Brew

    Glorious Red Rye IPA

The Nelson got drowned out a little by the Cascade. It has very good hop flavor and aroma, just not the lighter, fruitier flavor or scent that I smelled from the Nelson.
