    Thanks for the info scottland. I've been buying bottled water (2 x 2.5gl + 1gl) each time. I guess I should be refilling those 5gl bottles to save some money.

    Bringing this thread back to life to get some real world advice. I've been using bottled water and I would like to just use tap water. Has anyone confirmed that using Phoenix city water will taste just a good as bottled water. I don't think the water tastes bad here but I'm a really lousy judge...

    How quick can I bottle?

    I think most (including me) will tell you to wait 3-4 weeks before bottling. My first batch I waited 2 weeks. Now after 2 weeks kegged I took it back off tonight to let it condition more. It's just too green. As far as 8 or 9 days I doubt it would make a difference.

    I've had my IPA on tap for two weeks and I think it needs to sit a while before it tastes great. Is ok to take it off the CO2, take it out of the cooler, and let it sit at room temp? Is so, what do I have to be careful of?

    I like my glass carboys, it just feels right. :D If you decide to go glass be sure to also get a carboy handle (usually not included). From what I've read even with a handle you want to also hold it from the bottom to take pressure off the neck. I guess they can snap under pressure.

    That's what I was hoping for but there are so many ways to do the same thing that I want to do what's best. For the record I am trying to go for a mild raspberry flavor, like purple haze. I think I'll start with 1oz and see, assuming I can add more to the keg afterwards.
