    Im reading on different sites that the final gravity on this white house honey ale is supposed to be 1.016-1.014. mine has been fermenting for two weeks now and is at 1.020 and Steady. should I leave it to see if it will drop any or call it "ready to bottle" and bottle it?

    if you are going to add the apricot extract then yes I would secondary with it for at least a week. if you arent going to add the extract then you dont need to secondary. leave it in primary for three weeks and check gravity in the fermenter if you have to. no need to use a thief to pull out...

    Supposedly if beer is left around dead yeast too long it will impart bad/off flavors. Havent been brewing long enough to know and Im too impatient to leave beer in a fermenter for more than three weeks. When fermentation is done, it's done. Thats why you need a hydrometer.

    1 cup of water and the standard 5oz of corn sugar package that comes with the kit. Stirred into the brew in the bottling bucket when sugar water reached room temp. Bottles are sitting at 70-72 degrees.
