    Big Beer Questions

All grain mash. I mashed in at 151 for 90 minutes with a mash thickness of 1.75qts/lb.

    Consistently Low Final Gravities

I have not calibrated my thermometer. I'll do this now. Would a temp difference between 152 and 149 affect attenuation that much?

    Consistently Low Final Gravities

Not using distilled water but basic tap water reads around 1.000, which I assumed was 'good enough'? I guess I started getting frustrated last night while drinking a glass of Avery's Maharaja followed by one of my 90-minute clones. The clone was so dry compared to the Maharaja.

    Consistently Low Final Gravities

I'm a small batch brewer - 1.2 gallons per batch. I use a 2 gallon bucket as my primary and a glass gallon jug as a secondary (fyi - the glass jug volume is actually around 1.15 gallons). I have a 3 gallon cooler for my mash tun and I use a digital pen thermometer for my mash temperatures. I...

    Big Beer Questions

I hit 1.012, which has me a little worried that it might be too dry. I guess we'll see after the month long dry hopping that's currently in progress. The dextrose contributed to 21.2% of the fermentables.

    Big Beer Questions

The yeast nutrient idea came from the Dema-goddess recipe from the book Extreme Brewing by Sam Calagione. I'm not an expert but I'll take the advice from someone who set the bar for high gravity brewing.

    Big Beer Questions

I just brewed something similar a couple weeks ago. Granted I brew 1.2 gallons at a time but the process should be the same. For this brew I was making a 120 clone. I started off with a gravity of 1.084 and ended with a calculated gravity of 1.150. Surprisingly, I was able to continue...

Anyone used whiskey yeast for a big beer

FYI- I just took S04 past 17% ABV with multiple wort feedings. Final calculated original gravity was 1.150 down to 1.018, currently.

Small batch (1 gallon) DFH 120 Clone

Here's an update on my progress I just added my final sugar addition and pitched the secondary yeast (EC-1118). The running gravity is at 1.150 or 17.31% ABV and surprisingly the S04 is still fermenting! I pitched the EC-1118 for two reasons: First, I wanted to make sure only simple sugars...

    Cutting Down Batch Sizes? Easy..

I'm a 1 gallon brewer and I like to do big beers (9%+). If I target 1.1 gallons output, I get 10 12oz bottles of beer. That's a lot of big beer to drink for one guy so 1 gallon works for me. Also, I don't brew to save money, although saving money is a fun part of the process, and as someone else...

    Cutting Down Batch Sizes? Easy..

I'm a 1 gallon all grain brewer and you just divide the recipe by the starting batch size to get 1 gallon, then multiply by the number of gallons you wish to brew. For hops, I recommend you switch from ounces to grams (28 grams per ounce) and use mrmalty.com for your yeast pitching rates. I'll...

Small batch (1 gallon) DFH 120 Clone

Hi Guys! First time posting but I've been lurking for a while. I'm a big fan of Dogfish Head beers and 120 is probably one of my favorites. I've been sporadically brewing for the past couple of years and recently got into small batch all grain. I like big beers (9%+ ABV) and I'd prefer not to...
