    I actually tried the 66F starting temp and raise by 1 degree per day on a pale ale. It ended up with A LOT of undesired Belgian character. I'm letting it sit in the keg for a couple more weeks, but I put a bunch of Citra and Nelson in it and I literally cannot taste either though the Belgian esters.

    Totally agree on the lack of Pearl malt in morebeer's recipe completely discounts them. Kimmich himself stated that Heady uses pearl as the base malt. How do you know they use Carafa (430L)? I thought it was widely accepted that they use TF Caramalt (10L)

    I'm interested to hear how this turns out. How did you last experiment turn out? Did you notice anything different in the final beer when pitching the recommended amount and not increasing the temperature by a degree each day?

    That's a pretty high mash temp and conan still puts in work to bring it down to 1.012-14. For the record, the current iteration of Heady finishes at around 1.010. Do you have any pictures of the old Julius? I'd love to see them!

    Did you get any Belgian notes at these fermentation temperature? I accidentally fermented a blonde ale using Conan too warm (70F I think) and it now tastes like a light Belgian ale. Not bad, but not intended either.

    I think my only comment is how are you purging the keg before transfer? If you're filling the keg entirely with starsan and pushing it out with CO2 then you're truly doing a closed transfer with no O2 exposure. If not, it would be difficult to purge the keg of O2 before the transfer. Cool idea...

    If you mash low (148F) it won't finish that high. As far as I'm aware, most brew software doesn't take mash temp into consideration and just uses average attenuation for the estimated FG.
