    I have room in my kettle for 10 gallons, I did one batch, just to see if my equipment could handle it. Gave 5 gallons to a buddy brewer who paid for half the ingredients. It's really no more effort. I would have to buy some more kegs. Oh well.

    Reading thru the comments here, I am surprised by how many people brew 10 gallon batches. I always assumed since most people use the 5 gallon soda kegs that was the norm....

    Scorching with Avantco IC3500 - Theories?

    I agree. I have a concord kettle, pretty flimsy bottom. I now use a Wilser bag, Bayou Classic Tri-ply kettle and the 3500 Advanco burner, no scorching problems. I am really happy with the Bayou kettle. This is the one I use. http://amzn.to/2qgjnep

    Speeding the brew day, I guess I kind of get it. I BIAB but enjoy the process as much as the end results. I guess if you had young kids and needed the family time then speed brewing could be a thing. As others stated above, I don't think BIAB is any faster then 3v. The timed steps are the same.

    I BIAB, I have no plans to go 3V because I've built my system around BIAB, it's what I could afford to do when I moved to all grain. I will say this much, if I had not gone all grain, my stuff would have ended up on Craigslist, because in my opinion, the extract beer I was producing sucked.

    This was my experience too. 3 batches extract, did not like the beer I was brewing, found HBT and BIAB. Went the BIAB route. A year later, I have streamlined and pimped out my BIAB system and see no reason whatsoever to go 3 vessel.

    This is the only part of your statement, I don't understand. Why do you feel you would need to rework recipes? As far as I know, the recipes would be the same. Crush might need to change.
