    Blueberry Cider

Thanks. I was getting my sugars confused, lactose it is. DOes anyone know if Stevia has an aftertaste? Then again, I'm guessing it's expensive anyway. I've never stabilized my beer. What exactly is that? Planning on doing this next weekend. Getting excitied... Matt

    Blueberry Cider

Thanks. I've never used a sweetener before. How much dextrose should I add to a 5 gallon batch if I want just a little sweetness. I don't mind dry, but most of my friends enjoy a hint of sweetness. Thanks, Matt

    Blueberry Cider

More questions: What do the Craisins add to the mix? Is it for flavor or sugars? Speaking of; besides Splenda (I can't stand the aftertaste) what else is good for sweetening the cider? I don't want anything super dry. Matt

    Blueberry Cider

Looking to start a batch in a couple of weeks. How do yall think the taste will be affected by spending less time in the fermenters? I really can't wait a year, not enough patience. My only experience was with apple cider, which spent about three weeks in the primary and three in...

    Texas Hop Garden

I'm in San Antonio. Wondering if hop growing would work, or if it's just a waste of time. It sounds like 2007 was great in Central TX, but it seemed to be an above average summer for rain. 2008 was way below average. I'm wondering what hopswould do in average S TX conditions, or if it would all...

    Man, I love Apfelwein

I've read a couple replies that said it "wasn't necessary," but does anyone have any advice on whether I should do it or not? My recipe was 5 gallons juice, plus 2lb corn syrup, & english cider yeast. It's been going 2.5 weeks so far with about 50 seconds between airlock bubbles. Will a...

    Way too much carbonation

Hello all, A quick question about carbonation once beer's already been bottled. I finished bottling a Saison a month or so ago. After two weeks, I put them in the fridge. Everytime, I open open, however, foam rises out of the bottle, even if it's been sitting still for several minutes. When...

    I totally forgot the hops!!!

I boiled and added the half gallon last night. Of course some of the water boiled off and there was a lot of "hop sediment" left behind that I didn't pour in. What do yall think will happen? Does anyone think dry-hopping when I secondary ferment will help? If so, what kind of hops would yall...

    I totally forgot the hops!!!

Thanks. I'll never make that mistake again. It's my brain fart of the summer. Matt

    I totally forgot the hops!!!

Actually, it did start fermenting pretty quickly yesterday, at least I assume so (bubbles in airlock). The IBU is probably about 30, it's an american amber ale. Thanks, Matt

    I totally forgot the hops!!!

Let this be a lesson to never brew with a family event planned that afternoon. I was worried about missing my grandmothers 91st bday and distracted. So what should I cut back on? I've got a 2.5 gallon bucket I've thought about using for small batches. I might just pour off half of my mistake...

    I totally forgot the hops!!!

Hi all, After completing my last batch of partial-mash yesterday I realized I completely blanked on adding hops. It didn't occur today, so it's been going about 24 hours. Any suggestions? Can I boil hops and then add at this point? Am I totally screwed? Please help? Thanks, Matt
