    Critique my APA recipe

I'm going to cut the Crystal by half. The original recipe is over 10 years old. I know the use of Crystal malt has decreased significantly in recent years. Maybe I'll use Maris Otter instead of 2 row (failed to mention I've got 20 pounds here). I do like a good malt backbone. I'm going to...

    Most embarrassing homebrewing mistakes

I once brewed a pale ale that called for 2.4# of Munich Malt. My LHBS was out, so I purchased 2.4# of Caramunich (which is similar to C120) The beer was terrible. I called it my Cascade Crystal Bomb. I discovered what homebrew judges describe as cloying.

Single malt/ recipe ideas welcome for a snow day brew

Here in Central New York, it's not only my kids that are hoping for a snow day tomorrow. I've got about 30# of Maris Otter on hand & approximately 20# of two row. In the freezer, I've got 1# of Amarillo , 1# of Cascade & 1# of Centennial. Also, I've got an ounce of Willamette, an ounce of...

    IPA recipe....dry hop options/question

I appreciate the suggestions. I should have been more clear with my goal/end product in my original post. I'm going to stick with my original hop schedule for the boil, but I'll use the dry hop schedule suggested by Dgallo.

    IPA recipe....dry hop options/question

I am looking to brew a dry, crisp, balanced IPA. I'm locked into the ingredients that I have on hand for brew day, but I'm open to ideas for dry hops if someone's idea intrigues me. I am definitely not trying to brew a juicy NE style IPA for this one. All the beers I brewed in 2018 thus far...

    IPA recipe....dry hop options/question

I ferment in a better bottle & keg. Usually 6 gallons into the fermenter and 5 gallons into the keg.

    IPA recipe....dry hop options/question

I'm going to prepare a yeast starter tonight. I will most likely brew Monday am. With the advice I have received, I'll up the bittering charge (I have more Magnum on hand.) Also, I'll move the other hop additions to flame out. As for dry hopping, I can do one ounce Cascade, 2 ounces...

    IPA recipe....dry hop options/question

I am planning to brew the following IPA recipe in the next day or two. I'm not sure about my dry hopping yet. Any critique and/or suggestions of the recipe are welcome. 6# two row 6# Maris Otter 1.5# Rye Malt .25 Magnum (60) .5 Northern Brewer (30) 1 oz. Cascade (30) 1 oz. Northern...

Ideas for a 14 gallon demi John?

I recently was "gifted" a 14 gallon demi-john. I don't really remember telling a friend that I'd like it, but here I am. Apparently, i did because he dropped it off last night. What would you do with it? I typically brew 5 gallon batches. In my five years of brewing all-grain, I've only...

    Bottled Brandywine CO2 issues

I do not have a counter pressure bottle filler. What are people's thoughts about adding either yeast or a carbonation tablet to each bottle?

    Spontaneous Fermentation - Now What?

Update: I let my wild fermentation with a starter wort go a few more weeks as recommended. I was pleasantly surprised by the "clean" taste. My plan is to step up the starter next week then eventually blend it with a fermented beer.

    Mosaic Cascade A.P.A.

I ended up using the following hop schedule: 1 ounce Mosaic (pellets) at 3 minutes. Hopstand from 170* to 150* of 1 ounce Mosaic (pellets) & 5 ounces of Cascades. I am planning two rounds of dry hops with the following: 1 ounce Mosaic Cryo, 1 ounce Cascade

    Mosaic Cascade A.P.A.

Would anyone add centennial to the mix? If so, what amount? I have 3 ounces on hand for any kettle additions. I decided on a 90 minute mash because the kids are getting off the bus from their last day of school. The boil can wait a little while.

    Mosaic Cascade A.P.A.

Am I correct in using Cryo in the kettle (1st time use) then the pellets for dry hopping? Also, is the amount of Cascades what you would use? I've got close to a pound of them.

    Mosaic Cascade A.P.A.

I am already mashed in with the following grain bill: 8# two row 4# Maris Otter 1# Crystal 20 Mash is at 153*. I am going to pitch a yeast cake of ESB. I am thinking about the following hop schedule: 4 ounces Cascades at 10 minutes. 2 ounces of Mosaic Cryo hops at flame out. I am planning...

    Spontaneous Fermentation - Now What?

About 10 days ago I made a DME starter at night. Before it cooled, I covered the starter with my BIAB bag & placed it under an apple tree in my backyard. In the morning, I brought the starter indoors. Within hours there was signs of activity. Below is a picture. I have unsealed the lid once...
