    belgian stout

First off.....a very big middle finger to everyone who read my first posts on my weary trepidations over my first few batches. With all your wise ass wisdom and remarks I'm still brewing (all grain now) and currently going poor and getting fat while working at my local homebrew shop. Yeah, now...

Cold steeping - adding early or late to boil?

FWIW~ I made a CDA the other day and, like you, read all I could on the cold steeping procedure. I ended up upping the the amount of dark grains by about 5%, so I put my 30oz of dark grains in two grain bags, put them in a sterilized bucket, added 1 gallon of 80F water and let it steep...

waiting for my pumpkin to boil....

during the boil. I spread it on a cookie sheet and baked it for 45 min at 375F while the grains were steeping. It had a nice dark golden crust on it when I took it out. I sprinkled it with a tsp of pumpkin pie spice while it was roasting. The wort is cooling now.....

Trying some new IPA's. What do I have here?

Full Disclosure ~ Longhammer is a BMC product. My favs are the victory and great divide, provided you leave them in the cellar for a while. I personally like the smuttynose, although it's english inspired. Brooklyn tastes a bit like an english pale. This could be a result of my tastebuds...

    Strike two.

I have now failed twice to get a yeast starter going. I've done this before with great results so although I'm still a noob, I'm at least to second base. I'm using WLP568 Saison blend yeast. Here's what I've done, twice: Added 2 cups (500ml) of water to pot. Added 1/2 cup DME. Boiled...

Big breweries using small names to conceal themselves?

if you feed someone sh!t for 50 years and tell them it smells like roses they will eventually think roses smell like sh!t. I'm not swallowing the BS that some of you are throwing around. Yeah, at the time people were driving the market for lighter beer. I'm sorry, but in today's big business...

    The "new" math.

Exactly.....new math.......I'm new to mini-mashing and the proper formulation!! "correct" AND "new" Ok, so my levitation isn't going to be 4.4%, so I'll have to be careful and only have 3/4 of my 1L bottles....hmmmm...what to do with the rest...??? :mug:

    The "new" math.

That's fascinating!! Apparently Brewtarget and Beer Smith use the new math!! My strike water was at 162ish when I added my grains. After 30 min it was down to 144 with occasional stirring. I added some heat to bring it to 152 for the last 15min. My 6qts of sparge water was at 170. I'll...

    The "new" math.

I actually took a hydrometer reading before mixing with cold water. it was 1071. the reason I want to know what's going on is the last batch had an 11pt higher reading as well. (I hadn't made a starter based on my calculated OG, so when my measured OG came back higher than the recommended...

    The "new" math.

I don't think I made a mistake. I just copied and pasted. It gives me a range of 1039-1045. Even cranking up the efficiency to 90% only gives an OG of 1048. The only bit of confusion could be that in beercalc. the closest option is 'alexanders pale extract' and I'm using 'alexanders pale...

    The "new" math.

just finished brewing my 3rd batch of beer. and once again I overshot my original gravity. I'm not asking the normal beginners, "now what", question, but rather, "how do I keep doing this"?? I'm using hopville's recipe calculator. I was trying to clone Levitation. Here's what I used...

Beer Fg coming out high consistently.

thanks for the advise oh zen master. reading the directions on the yeast it said it would handle 1070 and I thought my OG would be 1066. it ended up being 1077 due to my miscalculation. I live in a one room cabin in AK, no electric (just one outlet) and the best my heater can do is about...

Beer Fg coming out high consistently.

BUMP..... Having the same issue here as well. I'm only on my 2nd batch (3rd if you count an all extract intro kit). My first batch had an original of 1080 and finished at 1028 (shoulda been 1022). (66% extract, 24% unconverted malts, 10% crystal malts.) I suffered very low ferm. T's...
