    Dunkles Weissbier Uncle Dunkel Hefeweizen.

    Looks awesome. Just jumped on my LHBS's website and sure enough they have dark wheat malt. I saved some 3068 from my last hefe and was thinking of doing a dunkel next. I also happen to have an oz of Tett in the freezer. Thanks for the hookup on my next recipe!

    Check out the first post.... I used 6 lbs wheat malt and 5 lbs 2 row. It was our first all grain and still one of the best batches we've made. Thanks for reminding me that I need to make it again.

    Mold in Fermenter/fridge ?

    I get the same thing in mine. I try to clean it out after each batch with a mild bleach solution. I haven't gotten around to it, but I plan to add an electronic dehumidifier or chemical desiccant like DampRid. The humidity gets very high in there and probably makes the mold problem worse...

    Almost dead on with your specs at 1.050 and 1.008. I don't even think I'll do anything to improve my efficiency on the next batch. It's wonderfully refreshing and sessionable as is, which is in stark contrast to the 10.25% IIPA that's sitting next to it in the kegerator....:tank:

    Slight sulfur smell from Hefeweizen

    Same here. Brewed 2 weeks ago and took a gravity reading last night. Detected a faint sulfur smell. I used wyeast 3068 and read that it's normal. I'll keg this weekend and I expect it will be gone by this time next week.

    Conman, meant to ask before, what OG do you typically get for this? Brewed on Saturday and hit 1.050. Seemed a little low and a quick online calculation told me I had something like 68% efficiency. We use BIAB and I forgot to ask LHBS to do a double crush, so I suppose this is reasonable...

    Best SMaSH recipe you've made???

    We made almost this exact recipe (except cheated with Columbus for bittering) and it was the best beer we've made in our 1.5 years of brewing. That is, until we made the second version which added a small amount of crystal malt and a bunch more Columbus in late additions. Holy moly I love mosaic!

    Fruit flies in kegerator faucet!!!

    Thank you for all the suggestions. I haven't yet ordered any faucet prophylactics (although I really like the balloon idea), but I did try a trap with vinegar and dish soap and more than a few have met their doom. I haven't seen any around the kegerator or in my beer since I set out the trap.
