    Not sure how to move forward... Still in Pre-Mash

    1. Not too much don’t worry 2. You can’t take a mash PH without mashing in first. Mash in your dough, stir good, let it sit 10-15 minutes and boom you’re good. 3. Water is good to go. Personally, don’t think i would have stopped my whole brew day because of this but hey to each their own.

    I brew all-grain…which I thought was what the OP was discussing when making the move to his new AIO. You are correct RO water straight up with extract is perfect. My apologies if I misunderstood the OP

    Welcome back to the obsession! Since beer is so heavily influenced by water and you are using RO water why not add the salts/minerals in order to make the beer taste better? I found my beers became significantly better once I began taking my water and water chemistry more seriously.

    Welcome back to the obsession. Patience is what I would suggest. Wait another three days, maybe take a gravity sample the old fashion way to verify FG and then if its stable, package in your preferred manner. :mug:

    I have not had the opportunity to remake this one! Life gets in the way sometimes and i’m still nursing a german pils and kolsch. If you want to stay traditional i would say stick with noble hops. If not than play away! Its a hobby brewing beer at home…go crazy and report back!
