    @Elric beat me to it.... Damned murderous albino... But, yeah, pretty much any base malt you buy is considered highly modified these days... Unless maybe 6-row? Caramel/crystal and roasted malts you don't need to worry about anyway. Step mashing for protein rest isn't really required...

    You can definitely underpitch, but if you have the the proper amount for 23L, then splitting it should be fine. Overpitch is less of an issue. So when in doubt, lean toward overpitch. There's probably a yeast calculator somewhere on line that can give you some idea on proper amounts.

    yup... should work... Splitting the yeast should work, but pitching a full packet in each fermenter won't hurt anything if you're anxious...

    Oils mess with head retention... I don't think they necessarily inhibit fermentation... With mead you don't need to worry about getting head ... (Freezing your nuts, now getting head .. what am I 12?) I don't see freezing offering any benefit to the pecans, but I don't see it harming anything...

    Room Temperature Hop Pellets

    The big danger, I think, is oxidation... Keeping them cold slows that down... They should be sealed in a nitrogen flushed mylar bag... So as as long they were un opened they should be fine... Definitely store them in the freezer after opening, though.
