    Yes, the relay is rated at 15A at 110V, but the unit as a whole (PCB board, terminals, etc) is rated at 10A. I would not feel comfortable recommending that people feel safe wiring this thing up for 15A without exploring the limitations of the other components involved. Sent from my iPhone...

    You could also flash the STC-1000 with Alphaomega's firmware and it will then read in F (and will execute fermentation profiles, which is awesome)

    Waiting ain't gonna change anything here, bud. You need to find where the obstacle is and/or the missing/broken part and fix it. Sounds like it's either the dip tube or the QD. Maybe pull those parts out and disassemble, then take some pics and let us have a look?

    Whoa, sounds like you got overcharged. Tongue Buckler is a big beer (10% ABV), so 12lb of DME for a 5 gal batch sounds about right. It's also a seriously hopped up bitter beer (108 IBU) so I could believe using 11oz of hops if you're going to do some big late additions and do some dry-hopping...

    Yep, all are mashed together. Nope, generally speaking steeping grains is a method used only for extract brewing. (There are some fairly obscure all-grain methods that would use steeping, e.g. cold steeping of roasted malts)

    FYI, some are supposed to be bent. If it has a smooth bend (roughly 30deg), that's how it's supposed to be. Ensure that this bend is pointing towards the center of the keg during reassembly. If it is kinked or otherwise deformed from contact with the inside of the keg, that's the problem...

    If all you want to do is hold a constant temp, don't use a profile at all. Select 'th' in the run menu (for thermostat mode) and set the setpoint to where you want it (38, in this case).
