    Replace the water you use for priming with the samples you took. Just boil it with your priming sugar like normal. That way you are not adding tasteless water to your beer and your not wasting beer.

    First, I wouldn't carbonate above 3 volumes in standard bottles. They are too thin and can explode. Second, why not use table sugar? It doesn't add anything and you probably have enough of it on hand.

    The one thing I would add is pick a beer you like that is kinda fool proof. If you take on something really challenging and it doesn't work out, you might get discouraged.

    I would keep the temp of the wort no higher then 67. Remember you want to measure the temp of the wort not the air temp around it. Fermentation can cause the wort to be 5 - 10 degrees higher then air temp.

    I use paint strainer bags in a 5 gallon igloo water cooler. When I drain and sparge, I pull the bag up and hold it open with spring clamps pinched on the handles. Works good.
