    I guess just do what you've been doing. I live in san diego and its hot in my garage almost year round so if i do bottle some i have to keep it cold once it's carbed cuz I've had a few blow up and that sucks! I just keg. It's a million times easier!

    The yeast will wake up and start eating the sugar you introduce at bottling time which will cause your bottles to carbonate. I'd say check a bottle after a couple weeks. If it's carbed good enough get those babies in the fridge so you don't get bottle bombs. if it's not, let it sit another week...

    Pyg, i honestly don't think it'd make a diff by adding the spice ingredients at the end of boil, actually not a bad idea i think I'll try that when i brew this. And cutting the 2 row down 3 lbs, should just make your abv lower by a bit. Maybe just add some dme or corn sugar to your boil to...

    Just found a 2015 6 pack of celebration at a local liquor store... i was super excited until i got home and popped one open and started to pour it out only to smell that oxidized cardboard smell and then i tasted it and almost threw up!! This must've been sitting in a hot room all summer...

    Apple wines, bottle conditioning a clear product

    Would using gelatin work in cider for clearing or is time my best friend for a nice Crystal clear pour? I use gelatin in all my pales and ipas and have commercial quality clear beer. Just wondering if i can help speed up the process! Thanks for any input guys!

    I live in north county san diego so I'm kinda close to Julian so this year im planning on heading up there and grabbing about 10 gallons of fresh pressed cider. Found a guy online who presses to order for about 7$ a gallon for small orders.

    I've made a few batches of cider using store bought walmart brand.. i know, sounds lame.. BUT, it turns out sooooo good!! I do 4 gallons, add 1 to 1.5# of local wildflower honey and about 4-6 tablespoons of brown sugar. I use saf05 yeast and Let it ferment all the way out for about 4-6 weeks...

    So after 7 days it has come from 1.095 to 1.018, roughly 10% abv! Smells like hot alcohol still, but tastes outstanding! Gunna transfer to secondary and let it sit the closet til December!

    There'll still be some residual co2 in the beer at this point that will escape and push that oxygen out. You should be just fine, I've never had an issue with a gallons worth of head space and bulk aging.
