    Overly Aggressive Yeast?

    10 pounds of sugar? what are you trying to make? also, what temp is it at? if the temp is high, the yeast really get going, leading to a lot of blow off... my guess is the amount of sugar coupled with high temps is the culprit.

    It was much harder in my head than when I finally did an all grain. don't overthink it, and you'll be fine. it may take a couple batches to get everything completely dialed in, but even if your off a bit on your first tries, the beer still comes out good.

    it'll be fine. you'll get a little more bitterness, and maybe lose a bit of aroma that would still be there if you followed the recipe, but most likely the changes won't be drastic.

    it will work just fine. pilsner malt is called that because it was originally made in Pilsn. it was used for making pilsner style beer, but it can be used in any beer.

    you could look in your spice rack for some other spices that could be used to bitter with. gruit was made with all kinds of things other than hops. theres' a book called Ancient Sacred and Healing Beers, or something like that which has lots of recipes and ideas for other bittering spices.

    depends.. do you want an American amber, or Brittish Amber, or what.... myself, I'd probably use cascades. or maybe a cascade and another variety combo, but that's just me....

    it should still be ok... the co2 coming out will push away the oxygen so the beer shouldn't get stale from the airlock popping off.

    never try to make coffee out of Pabst Blue Ribbon. The results are worse than you'd expect, and you'd expect it to be horrible. also the coffee maker will be ruined and all your coffee from then on will taste horrible.

    I don't see how the big conglomerates buying the smaller brewers and then selling their beer nationwide hurts craft beer. if they keep the recipes the same, at any rate. There have been some where they have bought them then changed the recipe and turned it into another mass market light lager...

    what yeast did you use and what temp? a high temp will speed it along. And some yeasts burn through everything real fast. it could also just be a loose seal. at any rate, I'd leave it in the primary for 2 or 3 weeks, make sure the yeast can do everything they can for the beer.

    there's lots of places that have flat rate shipping, at least for most things. usually carboys and such don't get included in that. Austin Homebrew supplies, Annapolis Homebrew, and brewmaster warehouse are places I've ordered from that had flat rate shipping.

    you must have gotten a bad serving of it... that stuff is a great English IPA. The rest of thier beers are excellent as well. One of my favorite breweries. seems weird one person's thoughts on a beer is so far apart from another person's.
