    does beer lose flavor as it boils?

    no, it actually gains flavor. there are malliard reactions taking place, the sugars being boiled are being changed, the hop acids are being isomerised to give bitterness.... some styles of beer benefit from boiling for a longer time, to increase all these flavor enhancements.

    Mexican Cerveza and Hops?

    I think Mexican lagers usually use the German noble type hops. if you can't use a lager yeast, I'd suggest US-05, or maybe White Labs cream ale blend. if you make it now, put the bottles in the fridge after they carb and leave them till summer, it should be lager like.

    I couldn't help myself!

    1.004 is already very low... you might find your beer to be too dry after adding the beano. I hadn't heard that adding beano would lessen calories. anyone else heard of this?

    Are the beginner kits worth spending money on?

    I think the components should last quite awhile if handled correctly. I'm still using the same capper, carboy, airlock etc. I got with my starter kit five years ago. I have gotten more carboys, and replaced the racking cane and tubing, but the originals lasted a good while.

    Hops

    I don't. I use a hop bag in the boil so they all come out before the beer is in the fermenter. other people just toss the hops in loose in the boil. I don't think it has too much difference in the outcome, I just like not having more gunk in the bottom of the fermenter when the beer is done.
