    Did the fermentation look aggressive? If so maybe it's something like the ingredients or mash schedule. If not then agreed the yeast may have lost a lot of viable cells and will have to putz along until done.

    Does it stay as fruity? That was always a thing I noticed when I brewed a "clone" vs the real thing - the real thing was far more fruity smelling. I keep upping the temps and I think it helps but am not sure if it's my imagination or not. And of course no more side by side comparisons.

    They certainly got interesting when they were put on a fire sale to be sold and gotten rid of. The lack of support would concern me though, parts supply for jobs like brakes or struts, electrical repairs if and when needed. Does this concern you at all?

    I know it's anecdotal, but my foamiest beers are always my Pale Ales and British ESB style beers. My least foamy are my stouts and certainly my Imperial Stout. I'd find it pretty hard to believe dark grain alone is the thing that boosts foam. There's more to it, something process related perhaps...

    Dissolving dry malt extract

    I put mine in after the grains I mash and so it's around 15X degrees F or so. SOme steam but not a ton. I do the whisk thing too. Snip a corner of the bag, pour it in really slowly with one hand, and whisk like crazy with the other.

    I've found you can dry hop at almost anytime. I've had a few instances with a gallon or so left in a keg, and put some hops in a bag and chucked them in. Right through the top lid, though with a little bit of purging afterwards. Of course the flavors and smells don't last more than a few days...

    Stout fermentation

    First and foremost, awesome! That said, give it a try sometime, make the same recipe with cooler fermentation conditions and see what you think. Even if you have to wait until winter to do it, keep it in mind.

    If it smells good and testes good, it is good. And I too doubt it got into the beer itself.

    I tend to disagree about 3 for 1.080 / 1.090, I've done 2 and 3 packs both a few times for a 1.1XX Imperial Stout I make twice a year and I'm positive there's no difference in flavor or final gravity. But do agree that I forgot how high an ABV folks take some of these beers and clearly 2 is too...

    I won't specifically disagree, but - 6 packets is a LOT of yeast even in 10 gallons. 2 would do the job, 3 for insurance, 4 if you want to go nuts. But 6? Maybe so, but wow.

    Thanks for the recipe! It'll go on my short list of "what to brew next". Will be interesting to do Columbus again, see if I like it better if I utilize it better. Curious on 165, I'm guessing that's your go-to whirlpool temp? Get the flavor, minimal IBU's. Is that where your other 23 come from?
