    Starter size is typically determined based off of the assumption of a specific cell-count contained within the vial, not the other way around. That said, depending on how new the vial is, you can typically expect around 70-100 billion cells.

    Ahh ok, I usually try and avoid caramel/crystal malts, but I know a little bit of it is correct to the style... I might look into a smaller amount of carafa then. I think 351 is similar to the wyeast 3068 weihenstephan strain. I typically stick with White Labs because that's what my lhbs carries.

    Blow off tube size

    I always just use 1/2" tubing due to the fact that it fits perfectly over the nozzle of 3-piece airlocks. And going bigger would require rigging something up. I think 1.5 gal worth of headspace with 1/2" tubing for a blowoff would be plenty. But that's just my opinion.

    It's likely that they're just asleep. The important thing is that it was fermenting at the right temp for the first few days, which are the most crucial. Raising the temperature should wake them back up to finish the job. Have you taken a gravity reading to see how far along they got before...

    Decant liquid or throw it all in?

    Decant most, but not all. I let it sit out until it warms up to the proper pitching temp, then give it a swirl with the remaining beer to get it back into suspension to pitch. I wouldn't throw in any hot water as that would likely shock the yeast.

    WL820 problems

    No personal experience with wlp820, but White Labs themselves claim that it's a much slower starter in its first generation... What was your lag time like the last time you used the 820? That seems like a TON of yeast. Weird. Any movement with a hydrometer reading?

    After five days in the bucket, what should I expect regarding the airlock bubbling?

    Question time... What are you brewing? What kind of yeast? What's the temperature at? What temp did you pitch at? Has there been airlock activity up to this point and now it's died out? Or has there been zero visible activity?

    Gotcha, thanks! It's not like I was overwhelmed with my hop schedule or anything either... I did an addition at 60 min and one at flameout. Just totally spaced on the tablet at 15. :drunk: Ha! Perfect solution.

    That might be the lighting/reflection of me holding my phone over the fermenter... Nothing really looks "oily," just a slight white film in certain areas.
