    Zinc usage - amount for healthy fermentation

    So has anyone tried just adding a zinc anode to the kettle or fermenter? You wouldn't have any real control over how much zinc is absorbed, but it shouldn't be zero. The problem would be maybe too much zinc. I was going to try making some lime-sulfur to strip the copper off of some pennies...

    Using US-05 as a bottling yeast

    Your LHBS should have sold you champagne yeast if they didn't have bottling yeast. It's cheap, too. I'm glad it mostly worked out for you. Keep the bottles cold and they should be okay.

    The cider is clearing now. Not sure how clear to let it drop before bottling because I'm going to bottle-condition it and I want it to carbonate. I could bottle it now, but the bottles might end up with a *lot* of sediment.

    American Porter: 90% pale malt, 5% light crystal malt (20L or 40L), 5% black patent malt. About 1.050 original gravity or *slightly* higher. Use whatever hops and yeast you like; mix it up to add variety. My best batch used Willamette hops and yeast cultured from a can of Bell's Oberon.
