    I open ferment my Hefeweizen in a 15 gallon sterilite container I got from Walmart. The lid allows CO2 to escape but keeps dust and other stuff out.

    The only issue I had when I went from a 3 vessel to an AIO (BIAB in a malt pipe) was the loss in efficiency. You can ignore it, add more grain or sparge. Myself I bought a second AIO, I use two Mash & Boil units, mash in one and sparge in the other. Works for me.

    Are your bottles clean? I mean using a brush clean? I had the same problem. Got lazy for awhile and thought rinsing after the pour was good enough. Beers were good for a month or so then I would start to get gushers. Cleaned them with a brush and was surprised at how dirty my cleaning solution...

    Top up during/after boil full grain boil off

    Adding water will work, extract brewers do it. Try to control the boil. If you’re having 30% boil off turn the heat down. Once liquid starts boiling it doesn’t get hotter, it just releases more heat, and moisture, into the atmosphere. You don’t need a full rolling boil.

    Myself, I would buy a RO unit and make my own water, which I do. I use a RO Buddie, $69.99 on Amazon. Pays for itself after about 10 batches of beer over buying water from the store.

    I use my old keggle to store RO water when planning my brew day. I also use 1 gallon water jugs, fill enough for a batch and let them sit until I'm ready to brew.

    I just got done brewing my Roggensbier. I use a Mash & Boil with a bag in the malt pipe. I used 21% rye, 32%wheat and 4 ounces of flaked rye. Added 1/2 lb of rice hulls. I had no problems with the mash, drained like any other beer I brew.
