    Wyeast 3724 Belgian Saison - they were right!

    Personally I think going through the trouble with 3724 is worth it, even if it takes 3 weeks longer. IMHO, 3711 is good and it's a lot easier to get a very dry saison with it, but 3724 is more flavorful, especially for the orange and juicy fruit bubblegum.

    Does anyone know why Wyeast markets their 3725 as biere de garde when it reportedly comes from fantome? Fantome is known for saisons, so why not just sell it as a saison yeast?

    Which Farmhouse/Saison yeast - more fruit, less clove

    WLP565, the Dupont yeast. I've used 3724 from Wyeast, which is their Dupont yeast, and the flavors were great when I fermented at 88F. Orange, lemon and Juicy Fruit bubblegum for fruits. Dry and peppery, too.

    WLP510 / Bastogne Yeast Aroma Question

    It's funny you ask. I've only noticed it with this yeast in a dubbel I made. Not in any other beer with the same water. I think the fermentation temp was about 73. Kind of high.
