    I cold crashed, added just sorbate, then kegged. The beer was good but the sorbate wasn't 100% effective, and it continued to be a bit active even in the fridge. Let us know if you have luck maybe using sulfate!

    'MUST BREW' list

    What's on yours? What should I brew tomorrow? On tap now I have a rich lager, a strong dark ale (think arrogant bastard, but near black), and just finished a wheat beer and a "kriek" sort of sour fruit juice beer. On the way is a straightforward red beer for my friends, and a Haus Pale.

    Dr. Malt... that might work in the pacific NW, but if I leave my malt out even overnight it dries out appreciably, doesn't hydrate!

    Lid not sealing on Keg

    Temperature? When my lid and O ring are coming out of a soak in HOT sanitizer, the ring is much softer and easier to seal than if it is coming out of the cold fridge. Also, sometimes it's just time for a new ring. They seem to get less supple as they get older (*sigh* if it were not so...)

    How is store bought H2O filtered?

    Really depends on the source (store) ... maybe read the label? Sometimes it's reverse osmosis, sometimes it's just "spring" water... which usually means ground water or tap water that has been filtered physically and maybe with charcoal.

    Red Ale turned out tofee-ey - input?

    I'm not good at describing colour, but it is relatively dark red-amber, with just a tinge of copper/orange maybe. Slightly darker maybe than I would have liked (ambient light only shines through in a faint red glow... you have to hold it up to a light to really see the colour well.)
