    Thanks. That is what I've been thinking. Just need patience and let it do what it's doing. Don't rush the cycle.

    I was thinking that fermenting produces the co2 and pushes the oxygen out, keeping a more sterile environment. So in general, I was thinking it would be good to rack to secondary with a little fermentation left, to push air out. If I wait till no bubbles, will there still be co2 filling air space?

    Is it better to remove the protein chunks before pitching the yeast? If done, it makes beer clearer but might lose head when pouring a beer?

    I know there's the argument about aluminum vs stainless steel. I've moved into a modified stainless steel keg for my wore boiler now, but I'm still using aluminum for my hot liquor cooker. Any comment there for aluminum vs stainless for hot liquor?

    I'm just getting back into brewing. I'm brewing a batch of double IPA from liquid extract. Fermentation went great in primary fermenter. I transferred into secondary fermenter after about a week. Waited a day then threw in an oz of pellet hops for dry hop. They broke apart, but sat on the top...
