    Wort is at 80F...

I've pitched at around what I am guessing is 90 degrees. I ran out of ice and time. It was 2am and I needed to get to bed. Ha. It was underpitched (newbie error) and I figured it would be fine with a belgian strain. And everything turned out fine! The beer had a great flavor profile form the...

Is all grain really THIS easy?

Wow, that's by far the simplest and easy seeming all grain brewing video I've ever seen. I haven't ventured into all-grain yet, but that made it seem a lot less intimidating. What the hell am I doing steeping a couple of pounds of grains for an hour just to add extract. Is it really this simple?

    Tips on using DME

The bowl trick didn't work for me. I had to measure out the right amount of extract by weight. I needed 5 pounds, and had two 3lb pounds. Where my apartment is rather humid due to no central air, it completely hardened and stuck to the bowl like crazy. It got this nice hard sticky coating on...

When did you realize, yeah, this is the hobby for you?

I almost forgot something. I really remember when it was. It was when I was about 11 years old. I saw an informercial for the Mr. Beer kits. I was so captivated, about the process, adding the yeast, and fermenting. I couldn't stop watching it and thinking about how good that beer would taste...

Cooper's Prehopped Kit Did not follow directions, too hoppy?

I think it was in Papazian's Joy of Homebrewing that mentioned krausen helps remove some of the more astringent and less desirable bitter hop characteristics, from the beer and hold it in the Krausen layer on top. Could that be what you are tasting? My first bast i brewed, the wort was very very...

When did you realize, yeah, this is the hobby for you?

When I realized I could drink beer and brew at the same time. Base jumping, Paintball, motorcross, biking, model building, none of those hobbies can you drink while doing ;). Haha, but seriously, I love good food, and good beer. So I figured it would be a natural step after enjoying cooking and...

    why no bmc stout?

I like american ale okay, but I've never bought a six pack and just drank it alone. I think what it is, for me at-least, American Ale taste good to me because I usually only drink it when I am at a Party or get together that is mostly BMC light beer. I'll drink the light beer, because hey! It's...

    Too Warm to pitch

I've Pitched a WL500 belgian wit from a tube into, i'm estimating here, about 85 degrees. No starter, but it's OG was 1.45 so I figured it would be okay. I ran out of ice for my ice bath and it was already 1:30 am, and I hadn't started cleaning yet. Sure enough started bubbling in just over 12...

off flavor on beer... help please ...!!

I know when I used to play paintball I would always oil the air intake of the marker where the Co2 tank would screw it. It's possible that there is residual oil in the tank or one the threads. Not sure if that would cause off flavors. Try getting the tanks filled at a different place. Maybe...

    Just don't get it

I love anything that has huge flavors. Fatty steaks (rib-eye Mmmm...), Bacon, Curries, Chilis, anything that has a ton of spices and herbs etc. I think the hot food analogy is perfect for hops. Sometimes you just can't get enough. Yeah, i may never make it through that 5,000,000,000 scoval unit...

Is there a good beer store in your area?

Huntington, WV doesn't have much selection past Rogue and SN, and the occasional good import. For great beers I'll usually make a trip to Whole Foods in Dublin, OH. Or if I'm visiting friends in Cincinnati I'll go to Party Source in Newport, KY, or Jungle Jim's in i think fairfield, OH.

Batch number two... in the fermenter

Oh okay Cool, I've only seen pictures of metal strainers. A nylon one seems a lot easier. Just tie it or bun-jee it on instead of worrying about a metal one becoming unbalanced and fall off. Great Pictures by the way!

Batch number two... in the fermenter

Is that a nylon mesh grain bag that you used as a strainer when your poured your wort (well, drain from the chiller) into your fermenter?

    Making yogurt

In Indian cuisine, if they want to make a yogurt based dish for dinner, don't they usually just leave a bowl of milk out in the morning to catch wild cultures? I don't think you'd get a most consistent results but it may be worth a try with a small batch, or even with a starter taken from some...

    Sanitizing oak chips

Hmm...Has anyone ever tried those Zip-Loc Zip n' Steam Bags? You can usually just toss vegetables in the bags without water and then pop them in the microwave. Although I guess you would want to add a bit of water since oak chips have minimal residual water in them compared to vegetables. They...

    Alcohol content by state

In West Virginia the ABV restriction used to be 6%, but a month or two ago they passed a bill that allowed up to 12% alcohol beer. It will probably take until July or later before we start seeing anything above 6%. Apparently the distributors in West Virginia's are kind of ******** with what...

My beer overflowed in the secondary, why?

I'm still new and learning about brewing, but isn't a week a little too soon to transfer from your primary fermenter? My guess is that it hasn't actually completely finished fermenting and that racking it into the secondary has stirred the yeast back into suspension allowing them to ferment more...

    Hello from Huntington, WV

Thanks for the welcome! I'm fairly patient, and my fermenter is right by a doorway so I can check the airlock. I don't think i'll have any trouble fighting the urge to open it up to much... ...Atleast not until the airlock stops bubbling and I have a panic attack and start posting on this...

    How did you find us?

I think I did a search for a recipe or a technique and some how landed on a forum post. Not a directly link from google, but I think through a different site or forum.

    Hello from Huntington, WV

Hello all! I just finished brewing my first beer. After deciding for 4 months whether or not to get a homebrew kit, i had some extra money left over and decided to take the plunge. I got the basic brewing kit from Midwest and their Belgian Wit specialty grain/extract kit. Not necessarily my...
