    The place I quoted is where I get my CO2, and they don't do swaps they refill. I found a place online to get a new one for $98 + $15 shipping, I think I will go with that. Thanks for the reply.

    I am trying to price out a new 20# CO2 tank, and the local shop wants $125 used, but it is filled. A new tank is $180. Any thoughts?

    Yeast preference poll

    They only way I know of getting a quick start on fermentation is to reuse the yeast cake from a prior batch. I have done this a number of times and it works great.

    Since I have started using liquid yeast, I find my beers have improved. I started with White Labs and have used nothing else. I have used a variety of the yeasts and have liked them all.

    Beer Captured is my bible fore recipes, I don't always follow them exactly, I like to tweek them for my own taste. I just did one of the Kolsh recipes in there and for the hell of it I added orange peel, I haven't tasted it yet, but I am sure it will be good.

    Swing Top Bottles

    I use swing tops all the time, I have not had any problems with them at all. I also have 2 growlers sitting in my cellar filled with a Belgian that I made, bottled right to them. I also keg, but I find with the swing tops it is easier for me to handle bottles.

    I have made the Brooklyn Brewery Black Chocolate Stout from the book Beer Captured, it was the best stout I have ever made. I'm almost out and my friends will be disappointed if I don't make more. I looks like a 10 gal batch this time around.

    Janx, I have only brewed a couple of Belgians, a couple of guys I know are into them a little more. But I have used recipes out of Beer captured and have really enjoyed the results.

    I have made a few Belgians, and have used cane sugar. A friend of mine has gone to the Ommegang Brewery and was told that they use cane sugar in their beers. If it's good enough for them, it's good enough for me, and it is a lot cheaper. I hope this helps.
