Pressure fermentation in the same keg that the beer gets served from.

sounds good. I like to put about 5 psi of pressure from my CO2tank before adding the spunding valve to make sure the lid is sealed well. I don't see mention of what pressure you plan to ferment at. I'd keep it at 5-15 if you're going to dry hop, like ThenFalcon says, you could get a mess if...

Pressure fermentation in the same keg that the beer gets served from.

I agree. I've used a piece of vinyl tubing connected to a gas disconnect for blow-off, if you did this I'd recommend 4.5 gallon batches for headspace in a 5 gallon keg. Depending on the beer and yeast, you could also get a lot of gunk inside on the top of the keg, fermenting under pressure...

Pressure fermentation in the same keg that the beer gets served from.

I do this, I ferment in a tall pinlock corny (~5.25 gal keg) under pressure with a spunding valve, and transfer to a CO2 purged serving keg via closed transfer (pic). It's super easy. Under pressure is great because it pushes the krausen down and I can get a 5 gallon batch out of this. Word is...

Had the "Floating Top Draw" problem this weekend.

I've had this problem, I saw on another thread here someone used a stainless steel nut slipped over the piece of steel tubing that the float is attached to, held in place between the flexible tubing and the ring attached to the float. It worked great for me. I can't remember exactly what sized...

    Dunkel Hefeweizen Yeast Selection Dilemma

I can't speak from experience since I only used it once and it was 4 years ago. Lallemand recommends 63-72 F, so that is probably fine. I know some have commented that different temperatures can lead to more or less banana or clove flavors, but I don't have enough experience to offer much of an...

    Dunkel Hefeweizen Yeast Selection Dilemma

    That's a good question, it's been a while. My best guess is 68 F.

Beer backing up the CO2 line

I guess the lid plus the checked disconnect should help, if the backing up occurs before in the timeframe you would be carbonating and before you can switch the gas line over. Here I am trying to help when I haven't had the problem, FWIW I carbonate naturally with a spunding valve, I'm a big fan.

Beer backing up the CO2 line

There are a couple of other options. Sorry if it's been mentioned, but have you looked at checked valve disconnects? - Check Valved Ball Lock Disconnect Gas In - Flare | MoreBeer Yet another option is one of these. Pricy, but would allow you to connect your gas line to the gas in after...

How I fixed my broken picnic tap

I honestly don't remember. I think it held on a while, but I've since had to replace it. I think the first picnic taps I got were bad, both broke eventually, but the last ones I bought have held on better, and now that I've been kegging a while I'm probably a lot more gentle with them.

have any ferment-in-the-keg folks tried high gravity dilution?

I have no idea, hoping someone else would know. I'm assuming the seltzer is fairly low oxygen if it's chilled and kegged quickly, with some potassium metabisulfate, maybe even add some more when transferring.

have any ferment-in-the-keg folks tried high gravity dilution?

I've thought about doing this as well. I'm wondering how this would work. Boil water, chill, keg and carbonate. A pre-boiled seltzer. Brew a higher gravity beer, targeting 4 gallons, fermented in a corny. Transfer a gallon to the 4 gallon batch at the time you would spund. Either in the...

    BIAB Volume for larger batch

It comes down to this, either sparge or top off. Both work. + for sparging, better hop utilization and everything in the fermenter has been boiled + for top off, it's simpler, you can top off with cold water to speed up chilling, and you don't have to worry about water chemistry for the sparge...

    BIAB Volume for larger batch

Thanks, I wish I could find some of the posts, but I remember seeing it mentioned several times in the electric brewing forums for 120v brewers. I use an 8 gallon kettle that can handle up to 11 or 12 lbs of grain for a 5 gallon batch if I boil gently. I also use a hop bag and squeeze out as...

    BIAB Volume for larger batch

Two things I've done in addition to all the other suggestions, you can boil less vigorously to have a lower boiloff volume and therefore a lower pre-boil volume (I boiloff a half gallon an hour, most calculators assume a gallon or more). The second is I add fermcap to the wort before it starts...

    Wort chiller/ plate chiller woes.

I use an immersion chiller, so not the same, but I use tap water until it's around 120, then pump ice water from a cooler with a harbor freight pump directly through it. I harvest ice from my ice maker for a few days to get about 10-20 lb of ice. This gets me to the low 60s usually. I've...

    Cold Crashing and Oxygen

Another option besides cutting the diptube is a floating dip tube, I have a couple of these - Top Draw® Beer Pick Up Tube. This is strongly recommended if you spund or cold crash in the keg. I added a stainless steel nut on the end of the tube with the float since it would sometimes pull air.
