    i appreciate your willingness to look beyond the norm- but i don't know about that one.

    Central American Brewing, thus far

    inspirational. when honduras throws you piss-wasser, you throw them a hail of ale. there seems to be an american parallel, at least where i live in new york- lots of people aren't even aware that there's more beer out there than bud, guinness, and corona. and what do you do about that? open...

    i have everything but co2 tank

    thanks guys. obviously a whole lot of people have never been in this predicament and i don't blame them. to be safe, i'm going to give it a few more days. my first attempt to pull the relief valve was silent. if, by brew day this weekend, i still have nothing, i'm just going to bottle these up...

    i have everything but co2 tank

    i have everything i need to keg- a good regulator, clean new beer and gas lines, a fridge... but no co2 tank yet. last weekend i kegged my brooklyn lager clone (didn't intend for it to be a clone but damn it tastes exactly like it) with a brand new (used) corny. NB ships it purged with co2...

    using corny without co2 tank

    for 90 dollars I'll just buy a co2 tank.

    using corny without co2 tank

    i can see that now on the newspaper: "Anaesthesiologist gets drunk...kills 3 in mishap at local hospital" Haha, a man can dream

    using corny without co2 tank

    interestingly enough, i have a 20oz co2 tank from my paintball days as well as a nitrogen tank. i am just not technically inclined enough to know what i should be asking the supplier about how to convert this (my adapter doesn't hook up to this tank).

    extra primary fermentation vs normal

    Out of 50+ batches I've made, only 2 have been in primary bucket for more than a week. the first one was from the northern brewer carmelite tripel partial mash kit, which came out awesome- but that was what the recipe called for. the second is a beer i made 2 weeks ago but it's my own recipe...

    using corny without co2 tank

    doesn't look too carbonated but the pressure relief valve did blow hard when he pulled it. could be on its way out for all i know. and that is a great idea with the spicy beer. you could eat mild buffalo wings with it and use the beer to start a fire, rather than drinking beer to extinguish...

    using corny without co2 tank

    thanks man. do i have to pull the relief valve often (or at all)- ie will the pressure get too crazy if i leave it alone for a week? and then secondly, how long do you think i'll need before i'm ready to tap that? and finally, like a cask, must i drink within a couple days or it'll go flat? just...

    using corny without co2 tank

    my gf bought me a corny keg a while back along with a really cool dual regulator. i never used it because money got tight suddenly and i couldn't afford a co2 tank. i still can't afford one but would love to utilize it (especially considering i have 20 gallons of beer to bottle tomorrow). does...

    Premature Racking?

    wyeast american ale 1056- smack and leave out for 24 hours. put a bunch of candi sugar into your ale during the last 15 mins of boil. see if you can keep the top on your bucket after 2 days with an airlock on that bad boy. that 1056 is one crazy yeast strain from what i've seen. very clean...

    Premature Racking?

    don't give up on her. as long as you have a carboy to allow for some extra secondary fermentation time, you could always check her progress over the next month or so. sanitize your siphon in a couple days and taste your beer. does it have any evidence of co2 and alcohol? if it does chances are...

    Premature Racking?

    If it happens again for future beers I'd suggest not transferring right away to a carboy. I have an image in my head that you transfered from a plastic bucket to a carboy within 48 hours. If that's the case I'm sure you've lost some precious yeast in the transfer. You saw all that gunk in the...

    New to lagering, need help

    I've done it twice now. As long as you refridge and you let it reswell for an hour to make sure all is still good (I've found that it deflates a slight bit) it works fine. I've only done it after a week so based on what you're saying you should be fine.

    American Pale Ale Bee Cave Brewery Haus Pale Ale

    If you can find Gaffel, that's my idea of a quintessential kolsch. It's light, has good balance with the tiniest straightforward malt flavor, and I can drink 6 of these with a smile on a summer day. FYI kolsch is an ale that gets lagered at low temps at the end.
