    Thanks rob, That is what I was thinking with the peach. Any thoughts on the ginger? Should I include in the boil with first addition of hops like the recipe says or would that be better as a secondary addition with the peaches?

    When to move 1st Lager To secondary

    Thanks for the suggestions, I am at about 80% fermentation and think I will rack to secondary today to get it off the yucky stuff. I think i will leave at 50 degrees until fermentation is complete, then slowly lower to 35 degrees and lager for 3-4 weeks.

    Knowing you ABV without a hydrometer

    There is a handy little calculator that I use from time to time here: http://www.buildabeer.org/beercalc.htm It can calculate gravity for honey, apple juice, and many sugars. I am not sure exactly how accurate it is, but it has worked out for me a couple times. Hope this helps....
