    Maybe I'm too conservative, but 3 volumes is generally considered the limit for pressure in standard beer bottles. I go with 2.8 volumes to be on the safe side, even though I'm probably not getting the maximum quality in the hefe.

    Efficiency was low, and top-off water volume was low. To some extent, they cancelled in terms of extract concentration.

    IMO it's best to just take two gravity samples, 3 days apart, rather than sampling three days in a row. Less chance for contamination and oxidation.

    I agree - not a proven fact. But several posters on this thread indicate it can happen. I’m wondering if some suspended solids (e.g. cold break) in the wort are setting and causing the stratification effect. Your sample looking stratified might be an indication of this.     I’m really surprised that a true solution, as opposed to a suspension of solids, would stratify noticeably in the few minutes before taking a sample. Now I’ve got something else to worry about. (Not really a believer in Papazian’s DWHAHB.)
