    Just a basic ale base, I figure most pale ale's are similar with the difference mostly being in the hopping. I'm planning 8 lbs of LME and 1 lb of crystal 60, fermenting with american ale yeast.

    Depends on how warm. A little too warm you'd probably get some estery (banana) flavors. Way too warm (80 +) and you could get powerful alcohol flavors, oxidation (cardboard), and solvent flavor. Phenols are usually found from chlorine bleach interactions from what I've read.

    How warm is your basement? We have a prog. thermostat too but our basement tends to stay in the upper 60's year round. Another option would be to cover them with a heating pad on low.

    Give it some time. My wife did a cider recently and after a few weeks it made me pucker, very tart and dry. After a few months however, it's much more mellow and I can drink it :) Not sweet, but not overly dry either. I wouldn't mess with adding anything until it's at least a few months old...

    Label paper either comes off too easily or too hard... Milk or glue sticks both rinse off easily with warm water. For me, the advantage of milk over glue sticks is that it's quicker and less mess. It takes a second to dunk a label in milk and slap it on, vs 5 seconds to trace around the edges...
