    steep to convert

Hello all, I'm doing a brewers best wit kit this Saturday. The kit includes a .5 lbs of flaked wheat, .5 lbs of oats and a pound of 2 row(I think). It has a steep to convert step for these grains. I've never done a partial mash so I'm a little nervous. From searching on here I came up with a few...

    fermenting temps

*update* Five weeks in the fermenter, one week in the bottle. The beer has a really weak mouth feel. It also has a bitterness that I don't know can be contributed to the hops. I know extract brews will always lack mouth feel. I might have compounded this problem by not steeping the grains...

    new foam this late?

I'm five weeks out on this Irish red fermented with notty. I missed my bottling day last week so I was going to do it today. The fermentation appeared done last week. The hydrometer readings were stable and the top of the beer was clear. This week new foam has started to form at the top. Now I'm...

    late extract questions

If you were doing a partial boil it would probably balance out (hop wise.) In the full boil the hop utilization will be higher. I use beer Smith to figure it for my wort.

    My beer's weak finish

I would kinda like to know what the recipe kits included.

    White spots

I used Irish moss in my second brew, also. I noticed a heck of a lot more sediment. I didn't rack to a secondary and I am only a week and a half in to it. I also had almost double the hop addition of my first. I am curious as to how yours turns out.

    extract question lme vs dme

Good question. I wonder if it isn't a approach to tailoring extract recipes to specific styles. I know that I use late extract additions and a lot of recipes don't call for it. The ones that do seem to be for ipa's due to the higher hop utilization in said method. Lme is suppose to give home...

    is this normal?

I'm using 3711 to ferment a saison. I've never used this yeast and don't know what to expect. I'm on day 8 and thought this looked suspicious. Any thoughts? I have a killer cold and can't really smell it.

Saison le petite - Northern Brewer *recommendations*

I brewed it yesterday. I am super excited to see how this turns out. I used Irish moss for the first time. I noticed quite a bit of sediment at the bottom of my carboy after transferring it. This is only my second batch so I'm not accustomed to adding two oz. of hops this late in the boil. I...

    Late extract additions

Yes. From doing some research I was under the impression that I would probably need to adjust my hops due to late extract additions. Though most of what I read was late extract additions in full boils. When I adjust my recipe in beer smith for my lower boil volume the hop additions tend to give...

    A Little Taste

I sampled my beer at the one week mark (from a hydrometer reading) and thought it tasted very light, also. It's an Irish red. I'm excited to see how it taste on bottling day and going forward.

    Airlock vs foil

I plan on doing a my first starter tomorrow depending what my smack pack looks like. I have a flask and a foam stopper. I'm kind of nervous about the stopper keeping out nasties but it has to work as well as foil I guess.

Saison le petite - Northern Brewer *recommendations*

I do want the esters and flavors. I think I might be a little wary of tempature issues from my last experience with nottingham yeast and my irish red ale. I just get a little nervous going over the recommended temp. I am kinda curious about using this yeast strain to ferment a wit beer. I would...
