    All grain brew

    Within the last month I have done my first and second AG. Now I am retarded and it was crazy easy! I do suggest you keep some DME around in case you have lower than expected gravity.

    A Re-introduction!

    Thank you all for the kind words! A few months before I came home I had bought a few All-Grain kits. Now I have always brewed extract, so this will be a fun summer. I have alredy brewed two of four kits, and will be brewing a third this weekend.

    My spin on "Smack pack arrived smacked!"

    I have recently had Wyeast already smack and at full inflation. I freaked and pitched some Coppers I had on stand-by. What it sounds like is that I should have made a starter first, then waited with the Coppers just in case.

    Standby yeast - just in case

    I have been using Coppers ale yeast almost exclusively. I have just started brew All grain and Partial mash, and when I bought the kits I bought some Coopers as well. Just in case and because I am used to it.

    Adding water to primary?

    I like to boil a gallon or two just for this. Not until recently have I been concerned with hiting my numbers. I would just pour #6 DME and boil.
