    I agree, I got into carboys to watch fermentation, but then one broke. So I bought more buckets! Basically you can buy 4 buckets for the price of a carboy.

    HBC Is excellent, I SMaSHed with it and it's delicious. Perfect pale ale style hop, you'll be very satisfied with the flavor it puts out

    Need help fixing low gravity wheat beer.

    Shouldn't he boil the new wort fully? Prevent any possible infection? I would treat it as a yeast starter, kinda, and give a 5 min boil before cooling and pitching.

    I'm going to refer you to the founder's breakfast stout thread, there is plenty of debate on when and how to add your coffee addition. I prefer grounds at flame out in a bag, but some claim it's too harsh of coffee flavor.

    What kind of yeast did you use? Did you use a starter? Did you pitch enough? If yes to these things, or dry yeast, you're probably fine!

    Is the beer still young? Let it mellow a bit and see where the coffee flavor ends up. I have another idea for coffee flavoring. Why not "dry bean" in the keg and pull them once you get the desired flavor profile? Probably need whole beans or a very coarse grind to keep them in a mesh bag...

    Mash in first, it's the actual mash pH that you're concerned about. Lots of salts in the malt already that will change and buffer your water

    Depends on your flavor profile. I personally like dark, black coffee, so I used black patent to give it a little bit more bite. Up to you really.

    I should have showed you my carboy after kegging last night, it had way more sediment than that! It'll pack down after primary fermentation is done. Just rack above it and you'll be fine, maybe losing half a gallon. Are you controlling your temperature at all? The crazy fermentation take off...
