    Does anyone else absolutely love Unibroue's Don de Dieu?

    I hope this thread continues, Don de Dieu is my favorite beer they make:rockin: I made a clone attempt last winter with the Unibroue yeast and had a beer that was good, but not close to it.

    So who's brewing this weekend?

    Brewed another quad yesterday with Chimay yeast. OG 1.16(still need to add my dark candi syrup:o), so we'll see how it turns out. Sitting at 66F and about to blow the lid off the bucket!

    What's their trick?

    I brew a LOT of quads, they are my favorite beer to drink. The only times that I have had my primary fermentation finish in less than a week(normally closer to 2 weeks @ 70) was when I had them up into the 80's ambient. I still let them sit another week before cold crashing for 4 days and...

    Wood-Aged Beer Pirate Strong Ale

    I always use one clear plastic Coke bottle when bottling so that I can easily check to see if the beer is carbing up. My test bottle is pretty rock solid today, so everything seems to be going well. I'll wait until mid August to take a taste:)

    Just brewed this today! I followed the recipe exactly except that I used 2 lbs of brown sugar, and I poured my wort through a sieve into the fermenter. I want this to be super strong, so I'm thinking of adding a pound or 2 of some D-180 in 48 hours. Thoughts?? OG was 1.096!

    About that wood: I brewed a 5g batch of 1.088OG of this on 7/10 and I just checked today and it's at 1.010. I used 3 packs of rehydrated US-05, should I wait the 2 more weeks? The wood has only been on rum for a week.

    The heatup times on my stovetop are terrible. To get 5 gallons of water to a boil takes almost an hour, and it doesn't ever get to a "hard" boil.
