I have a pack of Summit i purchased before i heard about the onion/garlic aroma. Is this a result of the cultivating of the hops or is it a defect in the hop itself.

Are you racking off the 1 gallon the same time you rack the remainder for bottling/kegging? If so than youll be fine. After the main fermentation has ended there is a layer of CO2 that acts as a blanket protecting the beer from oxygen. Theres not as much CO2 produced after fermentation slows...

Dont know if i missed you brew but i recommend using higher quality brown sugar in ageing beer. Some cheaper brands of brown sugar use sulfurized molasses and over time i think it gives it a Metallica flavor to the beer. Rock Chalk Chris

Im testing a stirplate for another guy on the boards and the only thing that i do different is i use an airlock but i run it empty. Only sanitized with a piece of sanitized foil on it so the carboy can "breathe" I dont really see the point of a stirred fermentation if your not getting any more...

DME dissolves in cold water easier than hot. It clumps up and is a PITA but not a huge deal. Id add it with 5-10 min left to get the clumps out and mixed well. Other than that watch out for the extra boil over. Hop schedule looks good to me let me know how it turns out. Rock Chalk Chris
