Brewed 10 gal of IPA on Wed. Split between Hansen and Imperial Juice. Starter for both 24 hours in advance. Starter was normal. Fermentation activity 4 hours after pitch and it is going strong. No issues here.

I get 83% attenuation. That plus the 90 min mash seems perfectly normal to me.

It will work fine. I use keggles and am at about the 3 Gallon mark for complete submersion.

I wouldn't recommend storing it for a week but if you have no choice you have no choice. Do you have the ability to lager? If so store the wort as close to freezing as you are able.

I am following along. A number of them are jacketed as well. Not sure how the features change as the size/volume goes down.

Measure your dead space with the pico FB. It is a lot. I took a bunch off the supports and made them conform to the keg shape I now have around .75 gal dead space. I think it was over 2.5 originally. This is especially bad if you are brewing 5 gal batches.

I do with my keggle MT. Especially with a high gravity 10 gal vs a session 5 gal batch.

^^Exactly what I do. I buy my grain in 10# sacks from morebeer and get the free shipping. It isn't as cheap as getting a full sack but is much easier to store especially if you aren't brewing that often (summer for me).
