I found the error of my ways. Apparently you have to power off the Arduino before you connect the STC. I mis-read that at some point. 10 consecutive fails applying power to the STC when the arduino is already on, then out of frustration powered both off and back on and then it works every time...

I've been wondering if the dissolved CO2 makes a difference. It'll be interesting to hear some feedback here. I always spin the hydrometer to ensure no bubbles are sticking to it.

Thanks. The profile thing really through me off. It only made sense that it would load into the hex data of the sketch. I just tried the download of the defaults, then changed values and downloaded again and I do see a difference in the eeprom hex data. I guess I did some thing wrong last time...

I've silver soldered my Mega Pot 1.2, and that worked very well. I believe the walls are .8mm (.031"). While I don't have stainless welding experience (I do plain steel) I would imagine that a good welder can do this easily.

This has been working for me quite nicely. I my case I bring a pot of water to near boil, fill the jars (in the pressure canner pot) about 2/3, stir in the dme till dissolved, top off with water, pressure cook, and store. I've also used second runnings, and make separate ones for wheat starters...
