    What I did for beer today

    Cleaned some bottles I had soaking, dumped the bucket they were in & rinsed that. gotta drain & rinse my grain bag outta the fermenter I'm soaking, lightly scrub that drain into bucket & rinse all. Then use the bucket of cleaner PBW to soak some more collection labels to trade. :mug:

    Lighten up. That one wasn't that bad looking, ie not very advanced. Bottling it eliminates the oxygen the infection needs to progress.     Adding a little wort at a time to help gradually bring the rehydrate temp down is OK too. :mug:

    That's why I use spring water, for the slight mineral content the lil yeasties seem to like.

    In the above pics, the broken ice pack-lookin' stuff is an infection. rather minor at the moment. so if it's ready to bottle now, do it. & try to limit airspace in secondary & you'll virtually eliminate this sort of thing.

    Well, it tasted rather boozy as of the 2nd FG sample. By the 3rd, it mellowed out to where it didn't have so much of that boozy quality. But boy, dang is that poufy part of the gruits taking a long time to settle in the bottles!...

    It's far more typical to pitch the rehydrated yeast at within 10 degrees of wort temp. Been doing that for years & it works great. They said 10 degrees for years.
