    OK got the starter going today, no one had the WLP099 so I went with EC-1118. Starter is progressing nicely, will probably pitch late tomorrow. Any thoughts on how much I should shake up the barleywine after I transfer it into the carboy?

    Yes, all good comments, I also only use sulfites for sanitizing EVER THINK so I have devised a filter using the kegs and a water filter, also thus the cold stabilization.

    Yes, and I would suggest an oversize csrboy, primary can be vigorous and shaking/oxygenation is a good idea

    Also did a berry mead with a large can of elderberry concentrate and a large can of boysenberry concentrate plus 15 lbs of wildflower honey, mmmmmmmmmmm. Both the blood mead and the berry mead were very pricey, but you get what you pay for.
