    IMO cinnamon will only really break down under boil, very hard to get into solution otherwise. So you could boil some water toss in the cinnamon, wait for chill and pitch it in, perhaps even at bottle time.

    Straight off the tap, most likely no. Do a search for bottle gun on the forums or counter pressure filler. I have the Blichmann one and it works great, but there are cheaper alternatives.

    Good call on the minimizing exposure. I couldn't do it like that due to logistics so I left just a little fully fermented beer in there as that should protect the yeast cake. I also filled the top of the fermenter with c02.

    It will work fine if you ferment the juice alllllll they way down and then add priming sugar/bottle like normal. You'll have a very very dry cider and of course that is fine if that is what you are looking for. If you don't let it ferment all the way, bottle bomb time!
